Chicken Caesar Pasta Salad

This is like my FAVORITE salad to make ... well, I suppose it's really in the top 5, I love my  steak salad  too ... and the  Olive-Y Garden  Salad, and the  Cabbage Salad  ... Anyways ... this is ONE of my favorite salads, hows that? And with Spring coming sooner than later, I figured why NOT share this again? It's so easy to do and surprisingly good! Here's what you need: Head of romaine lettuce, trimmed, washed and torn/cut into bite size pieces (if you were smart, you've already checked out the  foodsaver tip !) 1 grilled chicken breast (I generally use a leftover one) cut into bite size pieces a little bit of pasta, rigatoni or penne work best (cooked) sprinkle of fresh Parmesan cheese Caesar Dressing (I prefer Kens Light Caesar) Croutons It's so easy. Dump all in large bowl. Mix well to coat evenly. Serve. See that picture? That is made up of ALL leftovers ... the chicken was grilled for dinner a few nights ago, the salad stuff is ALWAYS ...

Simple Broth Bowls aka Fast Soup

Hey hey .... you know it's September and guess what that means? I  was   doing a September Whole30! Yup. It's true! And that meant I had to be a little more mindful of what I'm eating, how I'm eating and WHY I'm eating ;-) Not a big deal, said no one ever! A slight understatement, just for the record! Anyway. This idea came from Made It Love It Paleo ... and of course, because the concept was so simple, I hopped right to the kitchen and made one just for kicks. Yes, it was Day Two and a Tuesday morning. Cloudy, but still, already 85 degrees outside.  At 7:30am. I'm not a big Thanksgiving fan ... and every year, Hubby and I will lay in bed one night leding up to the big feast and discuss my 'issues' and what memories we have. Him? He LOVES Thanksgiving ... and it's a big deal when it comes down to it. My only real vivid memory is the scolding, ridiculing and just plain misery as I wouldn't eat any of 'that' food when I was a kid. Picky? You bet. Which is why I can sympathize with the Boy and why I always make sure to make a large tray of mac and cheese ... just one of those things that I can so relate to .... I like turkey nowadays ... thankfully, but after 2 full days of breakfast, lunch AND dinner, I get a little fed up with it ... so after we had this at the Brown Hotel a few years back, I had kept it tucked away in the back of my mind ... Menu Plan Week 46 - Using What We Have

Entering Week 22 of Hubby's Unemployment Adventures too ... I shopped quite a bit this past week ... too much.  Hubby is out until Wednesday so I will really be utilizing what we have on hand for the following week ... Once he is home, I will have to buy some milk, but I think we are good on everything else ... I was home Monday (thank you to all the Veterans for giving and preserving our freedom!) and decided to get the freezers organized ... watch for a post on 'that' ... also used up a spa gift certificate ... seemed to be the perfect day to do so ... Here's what we got going on this week ... Sunday - inside out burgers made by the Princess boyfriend. Beef came from freezer and amazingly enough, the buns in the pantry were still edible Monday - leftover chili from last week with a small salad on the side Tuesday - stir fry veggies with some chicken (chicken in freezer, veggies in fridge) ... wont' be as elaborate as that particular post! Using up those leftovers

We make a lot of food for Thanksgiving. Seriously. 2 10.5 lb turkeys 3 5 lb turkey breasts 10 lbs of mashed taters 2 tins of stuffing 1 dozen eggs, deviled tin of three corn casserole and then the rest of the snacky things. ALL of this was transported to our friends who live up the road about 8 blocks. Unloaded. Reheated. Reloaded at the end of the night. Ok, not ALL of it, but a lot :) Well, all 5 turkeys came home with us because they also fried 4 ... we love our turkeys! So. I forgot to take the eggs. In all the hassle excitement of loading the truck, someone forgot to open the fridge and grab the eggs last. Oh well. Could have come back home and picked them up but we had so much food already. Kathy had a ham, stuffing, 1 roasted turkey and one fried turkey, sweet taters, cranberry sauce (and this jar of stuff from IKEA!), cheese ball and crackers, green bean casserole and ohhhh so much more.
