Turkey Round Up!

Confession ... we aren't frying a turkey, or six, this year. Our friend is roasting a 21 pound bird and we will eat it at our house ... WHAT!? I remember last year our usual partners in crime spent the holiday back at their home states, Princess was in California visiting her fiance's (now her husband) father who has been there for a year receiving chemo treatments (who passed away that December), my dad had the flu and the boy and his girlfriend were vegetarian (still are) and doing something Veggie Like. And then I got the text message from my best friend in Bethany Beach that her mom was admitted to Hospice End Stage (which has just broken my heart for both her and her mom) ... which left me and Hubby ... WHO, by the way, was wearing a boot and waiting on x ray results on his foot ... this year, thankfully doesn't have all that drama ... a few things, but nothing like that! This year's only excitement will be the pregnant lady (Princess), only one partner in ...

4-Way Chili

We have a place down the street from us (well, over the bridge, around the corner and THEN down the street) called Skyline Chili . Oh? You've heard of it, have you? So ... it's not that I'm a 'fan' of the chili so much as the little coney dogs that are loaded sky high with the finely shredded cheese and onions ... oh yummm .... but ... Hubby and everyone else always, always gets the chili, 4-way ... and it's not inexpensive, all things considering. So when I have leftover chili, I try to re-create my the leftovers in to a whole different meal ... and this is one of the things I do (the other is Chili Cheese Dogs , of course!) Four Way Chili is really simple: Layer 1 -spaghetti (or you can do like me and use spiralized zucchini) Layer 2 - chili (and this recipe is a chocolate based, beanless chili so it's perfect) Layer 3 - finely shredded cheddar cheese Layer 4 - finely diced onions Now, the restaurant serves theirs on a platter. Chicken Cesar Pasta Salad

This is like my FAVORITE salad to make ... well, I suppose it's really in the top 5, I love my  steak salad  too ... and the  Olive-Y Garden  Salad, and the  Cabbage Salad  ... Anyways ... this is ONE of my favorite salads, hows that? And with Spring in the air for most of you, I figured why NOT share this again? It's so easy to do and surprisingly good! Here's what you need: Head of romaine lettuce, trimmed, washed and torn/cut into bite size pieces (if you were smart, you've already checked out the  foodsaver tip !) 1 grilled chicken breast (I generally use a leftover one) cut into bite size pieces a little bit of pasta, rigatoni or penne work best (cooked) sprinkle of fresh Parmesan cheese Cesar Dressing (I prefer Kens Light Cesar) Croutons It's so easy.
