Whole30 Simple Chili

*I'm sitting at home this fine Tuesday morning ... it's pouring down rain with thunder and lightning and I'm nursing a major headache ... does anyone else have a barometer head like me? Whenever the pressure changes and the rain comes my sinuses just flare up ... waiting for all the meds to kick in before I drive to work (2 hours late already) ...  So ... I shared this recipe back in January and figured since it's JUNE and some of you are playing the Whole30 game with me, I'm sharing it again ... mind you, I am NOT doing a Whole30 right this moment! #JuneWhole30 Yes, I do have a  Whole30 Compliant chili recipe  but Hubby isn't a HUGE fan of the chocolate in it ... as minimal as it is ... so when I saw  this recipe , I thought, sure, why not, lets give it a whirl. Whole30 Simple Chili

Ready for a NEW recipe? Me too! #JanuaryWhole30 Yes, I do have a Whole30 Compliant chili recipe but Hubby isn't a HUGE fan of the chocolate in it ... as minimal as it is ... so when I saw this recipe , I thought, sure, why not, lets give it a whirl. I'm glad I did! AND ... it's perfect for the Sunday Soup theme! Here's how I did it! 2 pounds ground beef 1 onion, chopped fine (hubby hates chunky onions) 4 tbs tomato paste (you know to freeze your leftovers in a Ziploc bag and just break off what you need, right?) 3 tbs chili powder 1 tbs garlic powder 2 tbs cumin 1 carton of beef broth 2 14 oz cans of roasted fire roasted tomatoes or just plain diced tomatoes. The fire roasted ones are really worth looking for though, trust me! generous dash of salt & pepper In large pot, cook your ground beef and onions til no longer pink. No Bean Chili

I really need to come up with a better name for this as the title just doesn't do this chili any justice! #JANUARYWHOLE30 I've been making this for the past 3 years or so and it's become a freezer staple in that I freeze half of it in a large ziploc bag for a future meal that's beyond just chili: 4 Way Chili , Chili Cheese Dogs , Chili Taters ... so many things!  Of course, MY favorite is the 4 Way Chili ... It's on the menu this week without the cheese! So, being that it's been a while since I originally shared the recipe, and I'd like to think my photography skills have gotten a tad better (stop laughing!) I figured I'd update the recipe! Not to mention, over time, I've made a few slight modifications to the recipe to suit our taste! Yes, it IS grain free, and because I finally threw down the kitchen towel on Thursday morning and said I'm doing it ( Whole30 ), I knew I needed to make a batch of this right away ... and even bette...

I really need to come up with a better name for this as the title just doesn't do this chili any justice! I've been making this for the past 4 years or so and it's become a freezer staple in that I freeze half of it in a large ziploc bag for a future meal that's beyond just chili:  4 Way Chili ,  Chili Cheese Dogs , Chili Taters ... so many things!  Of course, MY favorite is the  4 Way Chili  ... This batch was made with zucchini to keep it Grain Free/Paleo ...  remove the cheese and it's Whole30 Approved! Beanless Chocolate Chili

*This is a repost from a while ago but since I'm making it this week for dinner, thought I'd share the super easy and yummy recipe! Seriously, I don't know how else to label it? There are NO BEANS either ... I can remember years ago, eating chili and picking out every last bean and setting them on a plate. I wouldn't eat beans for nothing. Now? I love beans ... but, alas, this new eating plan takes away legumes which means no more beans ... So, back to the name ...  Chocolate Chili with Fire Roasted Tomatoes? Nah ... This is from  Mel  (where I gathered the  mayo recipe ) ... and it's actually a surprise that I even made this today ... And only because, I opened up the guest fridge and lo and behold, there was 2 lbs of ground beef sitting in the  shoe box . YIKES!! So quick ... gotta make something ... and I really want to try a couple of new things while Hubby is gone for the 2 weeks ... so here we are ... landed right smack in the middle of WiF...

White Chili in the Crockpot ...

I had made this chili quite a while ago and have no idea why I never got around to sharing it with you sooner! It's another Pinterest find and I think I need to put it on the menu pretty soon again! There are a lot of different recipes out there that always look so yummy, but for once, I wanted to try and stay away from the cream of whatever soups ... so this was the perfect recipe to give a try ... Did I tell you how happy we were with the recipe? Original recipe from Eat Cake For Dinner ... of course, we modified to suit our taste/pantry :-) Apparently it was time to either use these or toss them ...  1 16 oz carton of low sodium chicken broth 3 large chicken breast 1 tbs cumin 2 tsp minced garlic (are you prepping your garlic ahead of time?) 1/2 c dried onions (I was in a hurry and didn't feel like cutting a fresh one) small bunch of parsley, chopped 3 cans of northern beans, rinsed and drained salt and pepper Guess what you do?
