Black Bean Soup
I know, for someone who is "on the fence" when it comes to soup, I certainly have a few recipes to share, don't I? With this Pantry Challenge, I've been really trying to use what we have on hand for menu planning and menu prep ... so imagine my surprise when I went to make this and can NOT find a single can of black beans? What the heck?? Ahem. It would seem that Sonny Boy has been doing his own meal prepping and is putting together the fixings for knock of Chipolte Burritos using brown rice (pantry) corn (pantry) and ... you guessed it, black beans (pantry).
