Island Shrimp with Avocado

*Repost alert ... I'm planning to make this over the weekend as I have everything on hand except the radishes which a quick, "frugal" stop at the store can be done on the way home from the office ... enjoy! Another new recipe from another new cookbook,  Primal Blueprint Quick & Easy Meals . I've decided that I really want to get back in to the cookbook mode ... I LOVE cookbooks, and have tons of them ... but with my new way of eating, I need some inspiration, here and there. By the way, in case you didn't know, 450  Swagbucks  will  give you $5 in Amazon cash ... and that's how I've been buying the cookbooks ... Another side note ... I do NOT like to have them on my Kindle. I mean, yeah, it's sort of cool to just open up the Kindle BUT I don't like the layout/format whatever. It's not the same as looking at the 2 pages, side by side ... so I've decided no more cookbooks on the Kindle. So anyways ... I have everything, EVE...

Paleo Shrimp and Avocado Salad

*This is another repost BUT  I made it at the last minute for our Air and Sea Show Party this weekend and it was a huge hit so I figured yes, it's time to share, yet again! I really love it when I come across a recipe that I have ALL the ingredients on hand to make, except one!  I mean, it's like mandatory that you make it! This original recipe comes from  Skinny Taste  (which, by the way, I got her  cookbook  for Christmas and I'm sad to say I've not cooked ONE recipe from it yet!) and of course, I made a 'few' modifications but the whole idea comes from there! And yes, it's  Whole30  compliant (of course, I made this at the start of Week 2 and was still in the excitable mode!)  It will stay around for a repeat, trust me! Here's how I did it: 1 lime, juiced (Costco) 1/4 red onion, finely choppped (Aldis) 1/2 tsp avocado oil (or olive oil) (Costco) dash of salt (Costco) dash black pepper to taste (Costco) 1/2 pound of cooked...

March Salads is trending hard in the house!  This is a FAVORITE of mine and I make it whenever the Boy is not around and Princess is ... not as often as I'd like since she is now a married woman and before long will be 2 1/2 hours WEST of me ... ::sob:: DID YOU REMEMBER TO SET YOUR CLOCKS AHEAD?? Hubby is NOT a fan of this ... once I added the diced avocado and mango, I knew it would be an eye rolling, stick a finger in his mouth gesture ... so again, MORE FOR ME! HEY! Don't forget to set your clocks ahead ONE HOUR!  We like to do it around 2 or 3 in the afternoon just to get in the groove of things! Are you all following the theme for March? Salads. *This is another repost BUT I made it at 8am on Tuesday for lunch at the office ... I was so excited about lunch that I tapped into the bowl by 10:30am! I really love it when I come across a recipe that I have ALL the ingredients on hand to make, except one!  I mean, it's like mandatory that you make it! Bangin Good Shrimp

*This is another recipe that I shared quite a while ago and figured I'd share since it's on the menu for Hubby this week (I'm doing a Whole30 so I'll have another shrimp based meal!) Enjoy! I posted this recipe quite a while back and I've made it a time or two since, even though it's been on the menu quite a few times (hey, I'm honest, the menu is not set in stone!) ... so the last time I made it, I followed the directions a little more carefully and will have to say ... YUM  ... YUM ... YUM ... The cornstarch made ALL the difference in the world ... who would have thought? :-) So this is the NEW and IMPROVED, rather, than revised Bangin Shrimp recipe ... hop to and go make it! 1lb shrimp (I had to peel and devein ... I do both the top and the underside deveining). Avoid the salad shrimp at all costs, otherwise you will be flipping them in seconds and they will overcook 2 to 3 tbs cornstarch with a sprinkle of black pepper 5 tbs of  mayo  .....

A Simple Shrimp Dish

We've been working on eating down the freezers AND staying on budget. Just for the record, eating down the freezers DOES help the budget, except when you see a great sale on some frozen foods and think, hey, I've got plenty of room in the freezers for that! Ahem. It happens ;-) So, I was out of shrimp. Who would have thought that day would come? But never fear, there's always a sale on shrimp somewhere so of course, I bought more! Not stock up more, but more.
