Cobb Salads

Somedays, all I want to do is head out to Sweet Tomatoes and have an all you can eat salad buffet with unlimited soups and a few other starchy things on the side. I never opt for dessert because I'm usually a stuffed pig by the time everyone is ready to hit the yogurt bar.  No thank you. They do NOT serve Cobb Salads there but whenever I get around to making this, I'm always like, YUMMMM, we should do this more often!  So again, after making this for dinner the other night, only because I didn't have anything thawed, AND Hubby had made 6 hard boiled eggs, I got to chopping. Took me a whole 15, maybe 20 minutes top ... even to make it pretty like so! It's really easy to make and I figure it's a bonus that I generally have everything on hand for the most part since I try to keep a healthy fridge! I even had a little bit of blue cheese crumbles left to put on Hubby's since that's what HE looks forward to when he orders it! Me? I just stuck to t...

Cobb Salad

This is Hubby's favorite salad that he will almost be guaranteed to order if we meet for lunch during the week for about the price of oh ... say, $8.99 plus tax and tip (and the ice tea)  ... so I need to make it more often at home for a fraction of the price! It's pretty easy to do too, just a little bit of chopping and lining up and you are D. O. N. E. Head of romaine lettuce, chopped 2 hard boiled eggs, chopped Cooked chicken, turkey or ham, chopped bacon bits cheddar cheese, shredded olives, chopped (for Hubby's) Additional items that you like (avocado, onion, etc., just chop) Lay lettuce out in the bottom of a shallow, smaller dish. Then simply make a row down the middle with the meat, then cheese on one side and eggs on the other. Then bacon bits on one side and olives on the other side. Seriously? I've not cooked anything really worthwhile in like, weeks :) So I'm going to pull something out of the hat that was previously posted ... Just a side note: I really really need to start getting more food pictures taken ... So today I bring you .... Cobb Salad ... sharing with the Ultimate Recipe Swap ! A Cobb Salad Pretty easy to do, chop some lettuce (romaine), chop 2 eggs, chop some turkey lunchmeat, grab a handful of bacon bits (the real deal) or cook up a couple slices and chop, and then just put in neat rows on top of lettuce. I used olives (since hubby loves olives) and a little cheddar cheese since I don't have any blue cheese when I made this (now I have a Costco size container in the fridge). NO AVOCADO either because I didn't have that AND Hubby is not a fan of (I'm working on it) Normally I would offer up the Honey Mustard Dressing but since I haven't made any yet this week, I have this on standby ... thankfully! Skipping the gym

My back is still killing me ... I know it's just the muscle that was *over* worked out but still ... uggg. So I'm doing some laundry (to scratch that off the list soon), dishes, AND I made Hubby a Cobb Salad, his very favorite: Pretty easy to do, chop some lettuce (romaine), chop 2 eggs, chop some turkey lunchmeat, and then just put in neat rows on top of lettuce. I used olives (since he loves olives) and a little cheddar cheese since I don't have any blue cheese. NO AVOCADO either. Normally I would have offered up my honey mustard dressing but haven't made any this week (it's on my list) so I offered the favorite stand by (which is delicious!) So again, I've proved how much we love salads in this house ... and I feel like a GOOD wife in making dinner finally! :)
