Whole30 - Shallot Chicken

This recipe comes from  Paleo Girl 99  who I found on Instagram a while ago ... doing the Whole30 had introduced me to a whole new class of bloggers! So. The first time I made this, I didn't have the dehydrated shallots, but had dehydrated onions, so I improvised and used the onions. Yeah. Hubby was in love.  Asked me for 3 days if this was really the only thing that I did to make it taste so good. Was I sure it was just the dehydrated onions and not the "fried onions"  and on and on. Good grief. He just can't accept that something so simple would be so tasty. I did NOT share that this was  Whole30  approved as some things just don't need to be said out loud. Then I put this on the menu again and said, hmmm, let me just order some shallots from Amazon. Well. The first thing that popped up was $1xx.00 to buy. No thank you ... so I kept shopping and finally came across a  $12 bottle . Thank you one click ordering! *I still have the bottle all...

Buffalo Chicken Salad

I had the Food Network channel on in the background Sunday while I was shredding cheese and carrots for a soup I'm making this week ... and the  Pioneer Woman  was on ... need I say much more? Side note: I prefer to read her blog instead of watching her. I don't know what it is but I wonder if I'm the only one? Just watching her takes away some of the mystic of living on the ranch with kids and cowboys, dogs, cows and horses ... but I'm glad she's on as I'd never have caught this recipe! I suppose I should take a new picture and make it pretty, huh? So really, it's easy. Stupid Easy! Heat 3 tbs olive oil and 3 tbs butter in a medium size skillet Once melted, swirl around to mix a little and dry off 4 thin sliced chicken breast. How about another Sunday Soups recipe since we are to the countdown of Christmas! Seriously, can you believe it's December already?? The original recipe comes from  Shutterbean  ... and she puts it down as a low-carb option ... since I'm not so much of an anti-carb girl as I am an anti-GRAIN girl ... I've opted to go with Grain Free ... which, sadly, it's NOT because of the sausage I'm using. I really need to venture in to making MY own, don't you think? So ... you know,  if  you are buying pre-shredded cheese, it may NOT be grain/gluten free ... make sure to check your labels ... if you see anything like food starch, wheat, etc., then you know to put it back, grab the block stuff and take that home and shred it up yourself. Honestly, not a big deal. If you have a food processor, just use the grate blade and take the super easy way out ;-) *Shredded cheese usually has a coating to keep it from clumping up which is when the grain/gluten factor is introduc...

Cobb Salads

Somedays, all I want to do is head out to Sweet Tomatoes and have an all you can eat salad buffet with unlimited soups and a few other starchy things on the side. I never opt for dessert because I'm usually a stuffed pig by the time everyone is ready to hit the yogurt bar.  No thank you. They do NOT serve Cobb Salads there but whenever I get around to making this, I'm always like, YUMMMM, we should do this more often!  So again, after making this for dinner the other night, only because I didn't have anything thawed, AND Hubby had made 6 hard boiled eggs, I got to chopping. Took me a whole 15, maybe 20 minutes top ... even to make it pretty like so! It's really easy to make and I figure it's a bonus that I generally have everything on hand for the most part since I try to keep a healthy fridge! Whole30/Paleo Chicken and Broccoli

Uhm, are you seeing a little bit of a trend around here lately? Paleo? Whole30? What the ??? Nah, it's not that I've converted Hubby, thereby making MY life any easier, trust me, it's not like THAT at all ... BUT I have convinced him that I really need to be more focused on what I eat and that if he participates, even just a bit, it's a lot easier for me to stay focused ... Yeah. It's kind of working ... until the weekend rolls around and then the beer tops pop, the tequila and wine flows like a river and all those other cheesy little cliches ... (the mountains are blue in this house, just for the record) ... but if I can stay focused Sunday Funday through Thursday then I'm about 75% there, right?
