Thai Style Shirmp Salad - What's For Dinner

I knew the minute I added the diced avocado and mango that Hubby wasn't going to be in love with it, but Princess and I devoured it, therefore, a HIT and keeper for us, but only for the girls ... Week 66 Menu Plan - Using What We Have

After 41 weeks of typing "and Week xx of Hubby's Unemployment Adventures" I can delete that line! YES! He got the job that he's been working on for the past few months ... I'm so very excited for him ... he will be traveling internationally occasionally (I believe Spain for 4 weeks shortly) and while I'm not excited about him being gone for long periods of time, I do know that he really enjoys the travel and adventures so I'm ok with that.  The pay wasn't quite where I'd like it to be but he's ok with it (meaning it's less than he was making after benefits, allowances and bonuses) but more than some of the other offers. PLUS it's close to home so no big deal to get to the office when he's in town. We did have to drop a nice chunk of change on 4 new suits (he already has 2 nice ones) but we knew that it was a possibility the dress code would be a little higher than he was wearing before ... ummm, yeah, it is! It's been a while since I made this and since it's on the menu this week ... I thought I would renew the post ... always good to bring them up to the top again!   I do consider this to be a frugal meal as I almost always have bacon and chicken on hand ... throw in some pantry staples of canned shrooms and whatever cheese you have on hand and YES, it's frugal if it kept you cooking in your own kitchen!  This is seriously something that you would order in a restaurant and I bet, $14 and up is the going price! The recipe is pretty simple:   Boneless skinless chicken breast, cut them in half (butterfly) so that you have two thinner pieces (I almost always use 3 pieces of chicken to create 6 total) Bacon ... about 2 to 3 pieces for each piece of thin chicken (in my case, 12 slices) Cheddar cheese, either shredded or slice, whichever you have Provolone cheese, shredded or sliced.
