Deconstructing Peppers FAST

I love peppers ... red peppers especially ... what I hate though is the seeds and membranes and cleaning them up to eat :-) I wish you could just bite into them like an apple or something! So, when I came across this tip on Instagram a while ago, I was amazed at how much easier it is to do it this way and have been doing it like this every since! Let's Deconstruct a Pepper! 1. Wash pepper 2. Push in stem 3.  Pull stem out 4.  Tear pepper in half 5.  Trim side membrane off with a knife 6.  Trim off top and bottom 7.  Slice away Go ahead and give it a try! Sausage and Pepper Packets

We love sausage and peppers and I try to always remember to have some italian sausage links in the freezer ... AND because we are in the Pantry/Freezer Challenge, it's time to pull out the last package of sausage and cook it up! Just a note, I buy mine from Costco, they come in these four packs and cost about $12 or so for xx pounds.  I would much rather buy fresh made links but haven't been able to find an affordable source to do so, which means, for now, it's Costco. Anyway. The sausage and peppers.  The sausage typically will flare up on the grill at some point, usually when we've strolled back to the bar to get a drink and that means charred links. Not so very bad except that if it happens more than twice, they are toast. The onions and peppers are generally spread out on a baking sheet and cooked on the grill.  These will inadvertently get a little charred too, which again, is fine, but I H A T E cleaning that pan when we are done cooking. Veggies - Straight Up

A while ago, a had a post about Just Veggies Greek Style ... and actually, it was to have been a spin off from Whole Foods Greek Veggie Salad ... they had feta cheese and olives in the mix, along with some artichokes, etc. ... but me, I just wanted to use Straight Veggies ... hence the name. As we have moved into the first week of our Pantry Challenge, I figured I might as well start off with some stuff that's in the FRIDGE and try and even out some of the other stuff we hope to be using up ... so out came these items: It's not a very good picture but that is a cucumber, green pepper, red pepper, 2 Roma tomatoes and a sweet onion ... all from Whole Foods this past week ... I'll be damned if I'm going to let these go to waste for the price I paid! So, all you gotta do is just chop everything up in to bite size pieces, toss all in a non-reactive bowl ... then mix up the following in a small bowl: 3 tablespoons olive oil 2 tablespoons red wine vinegar genero...
