Loaded Baked Cauliflower

Hey! I've been a little MIA this past week ... sorry about that!    I  did  have a few recipes that I wanted to share for the big feast coming up on Thursday but life has, once again, interfered with my good intentions. So, hopefully, you'll have everything on hand to give this a try ... if not on Thursday, maybe Saturday or Sunday when you start to get really tired of those leftovers ;-) As I'm sure you've noticed, I've really started to try MORE veggies and so far, so good ...so here's to this yummy dish that I picked up over at  Skinny Taste  ... with modifications, of course ...  This is how I made it on a fine Saturday afternoon ... you should too! 24 ounces of cauliflower florets ... I love Costco for stuff like this (or 6 cups worth or use the bagged riced stuff!) 1/4 cup or so of bacon bits (again, great Costco buy!) 3 cloves of garlic, sliced 1/3 cup milk (I used 2%) 1 tbs butter 3/4 tsp sal...

*hey, hey, it's yet another repost but honestly, this one is so worth putting back up!* Have you had the pure joy of seeing one of these bags at Trader Joe's yet?? That there bag is pure heaven for a mere $1.99 each ... and when you see them, you better be snatching up more than just one or two as they go F A S T when they have them in stock! Just tonight I was talking to a girlfriend who was at the store on University south of 595 and she said they had some at 6:30pm! That was a miracle and she snatched up 5 because, you know, you don't want to be tha t p erson that clears the shelf ;-) Right?? Luckily, I just nabbed another 5 bags a few weeks ago and I've been hoarding them.  I could have been that person  and took all 12 that were in the box but I know how frustrated I've been when I keep missing the re-stocking so I figured I'd play nice and leave some for the next person! Lime-Cilantro Riced Cauliflower

Did you see my excitement a few weeks ago when I finally found the bags of riced cauliflower at Trader Joe's? I made a bag of that stuff that very night without any thought ... that's how excited I really was ;-) It was really easy too since the cauliflower was already riced ... all I had to do was zest a lime, chop some cilantro, juice the lime and cook the "rice". I have turned so many people on to this stuff in the past few weeks that I may never find it again at the Trader Joe's by my house! *Type 1 Diabetics should be stockpiling this stuff with only 3 grams of carbs per serving! This isn't really a recipe, so to speak, but more of a process. And I'm looking forward to making it again! Here's what you need: 1 12 oz bag of riced cauliflower (or you can certainly rice your own, it's just messy) handful of cilantro 1 lime Toss your cauliflower rice into a non-stick skillet over medium heat and allow to heat through without me...

I love Costco for stuff like this (or 6 cups worth) 1/4 cup or so of bacon bits (again, great Costco buy!) 3 cloves of garlic, sliced 1/3 cup milk (I used 2%) 1 tbs butter 3/4 tsp salt black pepper to taste 2 tbs of finely sliced green onions (you do regrow the roots, right?) 1/4 cup shredded cheddar cheese Ready?? Grab your rice cooker and steamer insert. Add water to bottom of pot and fill up the steamer basket with the garlic and cauliflower. I really had to cram mine in to close the lid ...  Set to 17 minutes to steam. Go ahead, toss a load of laundry in the washer, hop on pinter...
