Whole30 / Paleo Mayo

Today, I bring you Mayo. Yes, mayonnaise! I'm a mayo snob, I'll admit it. Do NOT ever put that Miracle stuff anywhere near my plate ... and no, I do not like Kraft either. Only Hellman's ... thank you very much. BUT ... once I made the stuff from scratch (it's really easy, I promise!) I never ever looked at another sale jar of mayo again. Oh. Well. Sort of ... I do buy the jar, I think maybe 2 in the last 12 months? Only because if we are doing something with heavy mayo, I'd be dying in the kitchen to keep up, you know? For the most part though, it's the stuff from scratch. Hubby will even inquire if we have enough for say,  Blackened Chicken Sandwiches  (birthday party, 10 people), or  Blue Cheese Dressing  ... or ... well, a lot of stuff ... he likes it as much as I do, and I hope you do too! The recipe calls for FIVE ingredients, that's all. F I V E! Go grab your jar of mayo from the fridge and look at the ingredient list. I'll wait. ...

Make Your Own - BBQ Sauce

This is a Hubby recipe and since it's coming up on July 4th, figured it would be perfect time to repost the recipe! It's pretty simple to make, doesn't really require much hands on time, but you do need to let it just simmer on the stove for a little while ... we all know that good things take time! Because we cook A LOT and serve up a ton of food, we double, triple, even make 6 times the amount called for ... the recipe below will make about one quart (Hubby actually messed up and wanted to make the 6 times amount to give us a half gallon, but alas, I left him alone and didn't double check his math stuff ...  Ok, ready to give it a try? Here's what you need! 3 cups ketchup 4 cups vinegar 1 1/2 cups molasses 1 1/2 cups honey 3 tsp liquid smoke 1 1/2 tsp salt 3/4 tsp garlic powder 3/4 tsp onion powder 3/4 tsp  Tabasco pulp  (you can use any other liquid hot sauce if desired, but might want to increase it a tad if you want it wa...

DIY - Ketchup or Catsup

Ok, real quick ... which is correct, Ketchup or Catsup? Ketchup gets my vote. Sorry. So, when I made the cocktail sauce a few weeks ago, I was squeezing the balance of the Heinz Ketchup out (which leads me to the next question: Heinz or Hunts? I'm a Heinz girl) and I made a "mental note" to myself to get Ketchup the next time I was out ... which of course, a "mental note" in the middle of Christmas day is NOT a good thing ... I remembered that I pinned a ketchup link a LONG time ago ... so I went digging around and decided to give it a shot ...
