Simple Side Grillin' Dish

Every time I do this, I kick myself for forgetting how good it is. And then, every time someone ask how it's done, I kick myself for forgetting how EASY it is. Yeah. Really. Onions and Peppers. And squash/zucchini if you like! Grilled in the grill pan. On the gas grill (although, I'm certain the charcoal grill would be awesome too!) Cut your onion in half (root end to top) and then cut in thicker chunks. Toss in to a large bowl. Deconstruct your peppers : push the stem down and pull out, shake out the seeds and cut in half (bottom to top) and again, cut in to thick chunks. Toss these in with the onions. *Optional, if you like, you can add chunks of squash as well, which is what I've done here, but 90% of the time it's just onions and peppers in my household!* Grab some olive oil and add a bit to the bowl. No measuring allowed on this recipe. You don't want them swimming in oil, but lightly coated. Take some salt, pepper, and any other kin...

Perfect Spring Dinner

I live in South Florida and we pretty much grill all year long. Except of course, when there's a hurricane coming (we do that like the DAY the warning comes out to cook up all the meat 'just in case') ... but I guess because we both grew up in the Midwest, Summertime definitely equates to more grillin' time. Lately, it seems every Friday, I am making the same thing, which is not to be confused with the same 'old' thing ... because most of us (ahem, with the exception of one boy) enjoy it and we eat it all up. Chicken and grilled veggies. Specifically, boneless, skinless chicken thighs AND onions, peppers and mushrooms. Uh huh. And if I'm really on top of my game, I go for the skewers ... because everything taste better on a stick, don't you agree? *Now days, I prefer to use these little guys as it's just so much easier ...  Oh wait, do we need a recipe? Corn on the Grill

I love corn ... and when Florida Sweet Corn is in season, I'm all over it! Only problem is that me and Hubby disagree on how to cook it. He prefers to boil the crap out of it. I prefer to gently steam it. And yes, we've done it on the grill, husk intact a few times. I'm not allowed to do that anymore since it makes such a huge mess of the grill and surrounding areas (you do know that Hubby is a super neat freak, right??). This latest way though is BY FAR the best way to make your corn. And easy! So very easy! As in, peel corn, place in middle of large tinfoil, melt butter, pour over top, close up foil tightly, place on indirect heat of grill and ignore for about 20 minutes or so. Tada! You got perfectly cooked, sweet corn! I'm not even going to give a "recipe" on this ... it's just too simple.   I will tell you to melt a stick of butter and season it up (I used salt, pepper, red pepper flakes and some parsley) .... Review of Flexible Wire Skewers

A while ago, I ran across these at Bed Bath & Beyond and of course, I had to try them out. No, this is not a paid review or sponsored in any way. I am NO WHERE near that big or on any one's radar (but hey, feel free to send me free stuff to try, but I am brutally honest!) Anyway. Now that we have that out of the way ... here's what I think. These cost a mere $9.99. Making Do

Hmmm...I think I use this title quite frequently, don't I? Well, it's FRIDAY (everyone sing THE SONG but don't yell at me!) and that means two things right off the top of my head: 1. Last Friday of the Summertime Pantry Challenge (which I'm continuing on into August because we apparently have way more food than I thought) and ... 2. Jessica over at Life as Mom has her Frugal Friday link up happening! So. Let's see.  What have we been making do with? Alot actually. But the one thing that I'm most thrilled with is fries. French fries. Uh huh.I admit it. We buy the frozen SEASONED fries. The ones that sent my BIL through the roof because he HATES them and everyone knows that. Mass Cooking for the Week

I work full time and then toss in the gym a few nights of the week and it's pretty hectic at times around here. Granted, the Animals are old enough to fend for themselves, Hubby knows how to cook and well, if you are that hungry, MAKE SOMETHING. But, I'm still a mom at heart and WANT to feed the kids a nourishing meal at the end of the day. Plus I still like the thrill of feeding Hubby something he enjoys ... what can I say. Off subject: just what the heck will I do when they move out (kids)??? Anyways. I don't do freezer cooking per se because I don't have any room in the freezers to really do so. Trust me, once those babies are near empty, that will be my next project! I AM a big fan though of pre-planning and prepping.  You know, prepare salads for the week, prep the rest of the veggies and so on. Menu Plan. One of my favorite things is just fill the grill up. Potatoes and Onions

We made this recipe from Tammys Recipes a few weeks back, and well, I guess I didn't follow the directions 100% and the taters were burnt and just not all that. Plus, the potatoes in the fridge were old. As in, seriously, on their last leg. If you've never had OLD potatoes (no, I don't mean the ones that are soft, smelly and fuzzy!), don't worry, they aren't that great! Anyways, its scalloped potatoes on the grill. Wrapped in TWO foil packets, not one, so you can seal it well and flip. Oh. Ok. I see what the problem may have been. So I decide to try it again with the chicken thighs. And wow! They were awesome!
