BLT Lettuce Cups

So this Whole30 thing hasn't been too horribly bad ... I think the first "failed week" was due to my total lack of preparation. This last REAL week hasn't been too hard at all ... the food prep on Sunday has paid off and I'm glad I had that food on standby for those few nights I got in later than anticipated ... even with the stressful issue with Princess being admitted to the hospital on Thursday, I've held strong ... thankfully ;-) So ... the BLT Lettuce Cups were on my Whole30 Board, because I knew I had everything on hand. Sadly, it wasn't until SATURDAY that I got around to making them and then I was like, geesh, I should have made these sooner ;-) This was MY lunch on Day 6 ... and if you follow me on Instagram, you can see what I've been eating for about 75% of the meals ... BLT Pizzas - California Kitchen like

My kids love this stuff. Ummmm. I suppose I should clarify and say that the MINI-ADULTS like this stuff when they go to California Kitchen Pizza joint/place. I also keep forgetting that they aren't really considered kids any longer at 18 and 20. AND I keep forgetting it's no longer my responsibility to make sure they are clothed (appropriately) and fed ... some habits are so hard to get over :) So. Anyways. Because I HAD to feed them, and because I'm still trying to maintain my Mom Of The Year status for a little longer, I made it. For the dough, I used the basic recipe from Tammys Recipes for her Papa Murphys pizza . (If you haven't checked out her site, you really should, there are some stellar recipes there and every single one I've tried has been spot on. In my bread maker, I added 1 cup warm water (115 degrees) Then in a bowl, I mixed: 1 teaspoon sugar 1/2 teaspoon salt 3 cups all-purpose flour or bread flour Poured that in with the water, and ...
