Loaded Baked ... Cauliflower?
Yes, you read that right ...Loaded Baked Cauliflower ...
As I'm sure you've noticed, I've really started to try MORE veggies and so far, so good ...so here's to this yummy dish that I picked up over at Skinny Taste ... with modifications, of course ...
This is how I made it on a fine Saturday afternoon ... you should too!
24 ounces of cauliflower florets ... I love Costco for stuff like this (or 6 cups worth)
1/4 cup or so of bacon bits (again, great Costco buy!)
3 cloves of garlic, sliced
1/3 cup milk (I used 2%)
1 tbs butter
3/4 tsp salt
black pepper to taste
2 tbs of finely sliced green onions (you do regrow the roots, right?)
1/4 cup shredded cheddar cheese
Ready??
Grab your rice cooker and steamer insert. Add water to bottom of pot and fill up the steamer basket with the garlic and cauliflower. I really had to cram mine in to close the lid ...
Set to 17 minutes to steam. Go ahead, toss a load of laundry in the washer, hop on pinterest, play with the cat/dog/kid/whatever ...
Once done steaming, transfer the cauliflower and garlic to a food processor with the blade in. Add milk, butter, salt and pepper and turn on to puree ...
Stir in the green onions and transfer to an 8x8 baking dish to serve family style OR if it's just you eating a snack (ahem, I don't judge, really), then grab a small dish and dish some up in that. Top with the shredded cheese and bacon bits.
Now ... you have two choices. I opted with the first option since it was a small dish for ME ... microwave for 20 seconds or so til the cheese is a little melty OR if doing the big dish, bake in a 400 degree oven 5 minutes or so til the cheese is melty. It's up to you, and again, I won't judge ...
Add the bacon, cheese, and bake for about 5 minutes or so, til the cheese is melted.
If desired, sprinkle with a little more green onion over the top, serve up and enjoy!
*If the cauliflower seems to be really "moist", let it drain a little in a strainer ... or use LESS milk ... if it's too watery, you will be sad that you just have a liquid form of cauliflower instead of a nice thick, creamy cauliflower ...
