Paleo Mushroom & Onion Sauce

Actually, it's grain free, dairy free, gluten free, Whole30 and yada yada yada!


We had a friend over for dinner and we were making steaks (from the freezer/Costco) and baked potatoes (fridge) during our #shelftember challenge ... I had picked up some shrooms at Aldi for $.79 a carton and Hubby wanted a mushroom sauce to go with the steak ... cuz you know, we are fancy like that.

Yup. Fancy Schmancy.

A few things that were in the way though:

I'm trying to kick the grains to the curb again (I'm looking at you, FLOUR/BREAD/PASTA/RICE!)

I'm also trying to keep Hubby happy as I do this.

AND we had company so it really needed to be ok, you know?

Introducing:

Yup, this stuff is just like a baking powder OR flour when you cook with it like this.

Sorry, I wish I had a better picture but all I have is my jar as I hate open bags in the pantry!


Another secret? Don't mix it with the liquid!

Add it in BEFORE the liquid. That keeps it from clumping up ...

SWEET!


So here's how it went down:

1 pkg of mushrooms, cleaned and sliced
1 small onion, cut in half and sliced super thin
1/2 carton beef stock/broth (I try to always buy stock)
1 to 2 tbs of arrowroot flour
ghee or oil of choice

Heat ghee in large skillet. Toss in the onions and let them sit and caramelize. Don't mess with them or else they won't caramelize!

Add mushrooms to pan, stir to mix with onions. Add a little more ghee around the outer edges of pan.

Cook until most of the liquid is removed. At this point you can season with salt and pepper if you'd like. I use our general seasoning mix (salt, pepper, garlic and onion powder all mixed together in a large shaker bottle).

Sprinkle the arrowroot flour over the veggies, starting with just 1/2 tbs or so. Stir, stir, stir to get everything coated.  Add in your beef broth and if you are feeling a little risque, a dash of red pepper flakes goes along way as well here!

Stir, stir, stir. The sauce will start to thicken! Yes! And no clumps!

I ended up adding more broth as mine got too thick (I used 1 tbs of arrowroot flour).

Taste and adjust seasonings as desired.

    1. I was never a big fan of mushrooms until I started cooking them myself ... my secret? Don't cook them to mush ;-) Just like any other vegetable!
