Frozen Strawberry Margaritas

You probably already know that I LOVE margaritas ... uh huh ... but not the heartburn at 2am after a few of the ones using the pre-made margarita mix ... Hubby already has the system worked out where he just pulls out the bottle of Prilosec and sets it next to my glass. Pretty pathetic, don't you think? ;-)

So, that with the fact that I'm trying to eat a little healthier and more whole foods, this was a perfect recipe to give a try AND it qualifies as part of the pantry challenge since I have frozen strawberries in the freezer and way too much tequila on the bar ... plus it used the big blender which made me very happy!


This makes ONE generous drink ... I had a couple and let me just tell you that 1 cup of tequila is a LOT ;-)  Was wishing the following morning that Hubby had set out the bottle of Advil too!

1/2 cup tequila
1/2 cup frozen strawberries
juice of half a lime
1/2 tbs triple sec
1/2 tsp powdered sugar
1/4 cup sparkling water (I grabbed the soda stream to carbonate some water from fridge)
1/2 tsp balsamic vinegar (per Nigella ... this is a secret ingredient that did make a difference!)
3/4 cup ice

Add all to the blender and let it rip. I've got a Vitamix and had no problem with it being too thick but you may need to add a little additional liquid (um, think twice before you add more tequila!)

I was so happy to see these little cocktail umbrellas at the dollar store ... 16 for $1 ... I'm in!

    I love, love frozen strawberry margaritas! Those are two secret ingredients that I did not know was in it - powered sugar and balsamic vinegar. Hmmm...interesting. Looks tasty, too!

Honestly, we have real good hygiene habits in my house, I can assure you of that! Rice Cooker - Hard Boiled Eggs

One of the things I picked up at Costco was a new Rice Cooker. The one I have, well, I gave that to the Boy when he went away to college (so he could make his macaroni and cheese), not to mention, it was small as heck, like mini size! So, I figured, you know, Hubby likes to make rice occasionally. The Boy makes brown rice in the microwave every other day and leaves the bubbly residue behind for ME to find when I go to heat something up (I hate a dirty microwave, totally wigs me out and sends me running for the windex!) ... so I grabbed the rice cooker ($29.95), a 10 pound bag of organic brown rice and a 20 pound bag of Basmati rice. I'm asking myself now, a whole week later, what the hell am I going to do with 20 pounds of Basmati rice? Anyways. Then I was reading the recipe booklet that came along with the cooker. They had one recipe that said to add the eggs, unshelled, to the steamer basket.  Ok. That made me re-read it a few times. Unshelled? Did they mean out of the shell?...

A Food Saver, Canning Jars and Lettuce

When I was clearing out the trailer for my dad, I came across so many gadgets. Ninja Blender. Magic Bullet. Some funky steamer thing. Hand mixers. Just a bunch of different things. I got rid of all of them to Goodwill. No, I didn't want them ... they had not been taken care of and I do not think I would have wanted to spend the money to ship them to me back home. A VitaMix, well, maybe I would have splurged to ship THAT but alas, didn't find one of THAT. I did however, nab the Food Saver. I've been wanting one for a LONG time but just could NOT justify the cost of buying one. I cleaned it up and THEN found 3 food saver containers. But no hose. So I kept cleaning ... came across 3 boxes of the bags, one was a food saver brand the other 2 are different brands. AND finally, I found the directions ... and the hose! Sweet!
