Week 66 Menu Plan - Using What We Have

After 41 weeks of typing "and Week xx of Hubby's Unemployment Adventures" I can delete that line!

YES!

He got the job that he's been working on for the past few months ... I'm so very excited for him ... he will be traveling internationally occasionally (I believe Spain for 4 weeks shortly) and while I'm not excited about him being gone for long periods of time, I do know that he really enjoys the travel and adventures so I'm ok with that.  The pay wasn't quite where I'd like it to be but he's ok with it (meaning it's less than he was making after benefits, allowances and bonuses) but more than some of the other offers. PLUS it's close to home so no big deal to get to the office when he's in town.

We did have to drop a nice chunk of change on 4 new suits (he already has 2 nice ones) but we knew that it was a possibility the dress code would be a little higher than he was wearing before ... ummm, yeah, it is!

So ... with his first day on Monday and Princess entering her SECOND week of her big girl job, I'm going to have to re-train myself to cooking nightly ... I will admit, I got a little spoiled with Hubby being home and getting the dinners put together for me ;-) Time to get back to the real world!

With that, I did pre-make the taco meat on Sunday afternoon ... meant to make the chili too but time got away from me so will do that Monday night (not a biggie and may just cook the beef Monday morning and let everything simmer when I get home Monday night.  Hubby will be out Tuesday night for a dinner meeting (already!!) so that's one less thing to worry about!

Here's what I'm aiming for:

Sunday - hot dogs, chicken sausage and fries ... all from the freezer. Also made a small batch of coleslaw to use up the open bag of slaw in fridge. Hubby picked up the buns while out. The Boy opted to do his Chicago Style


Monday - Cobb Salad - all ingredient in fridge and will use the honey mustard dressing (unless Hubby wishes to have blue cheese dressing) ... both dressings are homemade and in fridge already
 

I am sort of leaning towards making TWO salads with the 2nd one being the Thai Style Shrimp Salad because I have a bag of slaw left and 3 avocados and 2 mango's in the fridge that need eaten ... Princess WOULD help me eat this too :-) Shrimp in freezer


Tuesday - Taco (salad) Tuesday. Ground turkey from freezer, balance of fixins and ingredients in fridge and pantry (might make a quick run to Costco as I think I'm out of chicken breast!)

Wednesday - Crockpot night - Salisbury Steaks with mashed taters ... beef from freezer, taters premade in fridge


Thursday - chili with grilled cheese sandwiches. I am hoping to get around to making some Grain Free Biscuits too while I'm at it ... we will see. Hoping to have the chili made up on Monday to stick in fridge til tonight. Beef from freezer, balance of ingredients in pantry and sandwich stuff in fridge and pantry




Friday - Chicken on the grill with some veggies on the side



Saturday - Hubby's Choice

I would say it's going to be a pretty exciting week so there you have it!

  2. Hi since I'm new reading your blog, I didn't know anything about your hubby's job situation but congrats to him for getting a job. In this economy, it must be very hard to find a good job these days. So glad he did. All of your recipes (and pics) look and sound so tasty. Again, congrats to your hubby and your daughter too!

    1. I only really mentioned the unemployment issue during my weekly menu plan and the sort of weekly Frugal Activities post :) I tried not to dwell too much on that!
