Menu Plan Week 115 - Using What We Have

Hi! Did you miss the plan last week? That's because I didn't really HAVE a plan as it was a busy week and figured, salads, tuna sandwiches and one night of chicken and roasted broccoli didn't really warrant a post about menu planning and meal prep! So there you have it! This week however, busy as it might be, yet again, will have a plan as I just feel lost without some idea of what to have any particular evening. You know, just because I say chicken and veggies on Monday does NOT mean chicken and veggies on Monday ... that might be pushed to Wednesday or just in to the following week ... especially if I forgot to take the chicken out of the freezer!! Which brings me to ... for a little while, I was making it a point to pull all the protein out of the freezer on Sunday for the week ahead. Sadly, I've had a few items that ended up getting tossed as the following Sunday reveals that I didn't use something I should have ... like the 3 pounds of ground beef in the ga...

Costco Time!

If you follow me on Instagram , you may have noticed that I was at Costco today ::gasp:: ... they have the Wild Planet Albacore Tuna on sale for $10.99 ... so I picked up 6 packages ... that's like, 36 cans ;-) A lot of tuna, I know, but we've been eating a lot of that lately for lunches!! Anyway. Have you also noticed that I have NOT been posting my Frugal Activities post lately either? :-( I know ... it's jus that I haven't 'felt' Frugal lately, so to speak ... just been in a funk and certainly hope this last round of antibiotics takes care of whatever it is I've had going on! Deconstructing Peppers FAST

I love peppers ... red peppers especially ... what I hate though is the seeds and membranes and cleaning them up to eat :-) I wish you could just bite into them like an apple or something! So, when I came across this tip on Instagram a while ago, I was amazed at how much easier it is to do it this way and have been doing it like this every since! Let's Deconstruct a Pepper! 1. Wash pepper 2. Push in stem 3.  Pull stem out 4.  Tear pepper in half 5.  Trim side membrane off with a knife 6.  Trim off top and bottom 7.  Slice away Go ahead and give it a try! Life REALLY is Good

Happy Saint Patrick’s Day! This is a repost from 2009 ... sometimes you have to look back on things and realize that for all the bad things that happen in life, good things will generally come of them! Quick and Easy Creamy Salad Dressing

I love ranch dressing ... and I really love blue cheese dressing ... but alas, I'm trying to watch what I put in my body for health purposes ... so I've been avoiding those 2 dressings since the first of the year ... except those days when I get to go out to my favorite local bar/pub and get a bacon blue cheese burger ... then all bets are off. But the other 99% of the time? No thank you. And now, I'm getting a little tired of the great balsamic and olive oil blend that I make quickly every morning (1/4 cup balsamic vinegar, 1/4 cup olive oil, 1/2 tsp dijon mustard, dash of salt and pepper and shake it up) ... so when I saw this recipe over at The Kitch I knew I had to give it a try for something different!!
