Cobb Salads

Somedays, all I want to do is head out to Sweet Tomatoes and have an all you can eat salad buffet with unlimited soups and a few other starchy things on the side. I never opt for dessert because I'm usually a stuffed pig by the time everyone is ready to hit the yogurt bar.  No thank you.


They do NOT serve Cobb Salads there but whenever I get around to making this, I'm always like, YUMMMM, we should do this more often!  So again, after making this for dinner the other night, only because I didn't have anything thawed, AND Hubby had made 6 hard boiled eggs, I got to chopping. Took me a whole 15, maybe 20 minutes top ... even to make it pretty like so!


It's really easy to make and I figure it's a bonus that I generally have everything on hand for the most part since I try to keep a healthy fridge! I even had a little bit of blue cheese crumbles left to put on Hubby's since that's what HE looks forward to when he orders it!


Me? I just stuck to the basics and used my homemade Honey Mustard Dressing too ... after we were done eating, we looked at each other and gave a high five ... these salads hit the spot!

Here's what you need:

1/2 head of iceberg lettuce, torn (or cut) in to bite size pieces
1 head of butter lettuce, torn (or cut) in to bite size pieces
handful of grape tomatoes, cut in half
1/2 seedless cucumber, cut in half, quartered and chopped into small bite size pieces
4 hard boiled eggs, chopped
bacon bits
ham or turkey, chopped (I used ham this time around)
shredded cheddar cheese
optional - crumbled blue cheese
optional - diced avocado (highly recommend but didn't have any)
Ranch, Honey Mustard OR Blue Cheese Dressing (these are 3 tried and true recipes!)

Ready to build this bowl of awesomeness?

Add a handful of each lettuce to each bowl, more or less as you'd like.  Put the lunchmeat down the center of the bowl.

Add a line of tomatoes and then a line of bacon bits.

Add a line of cucumbers and a line of cheddar cheese.

Add a line of eggs and then the avocado if using.

Garnish with the blue cheese crumbles if desired.

Serve with your dressing served on the side.  I like to keep my salad pretty when I eat it. Hubby, on the other hand, grabbed a big mixing bowl and dumped his pretty salad in there so he could properly "dress" his salad ;-)  MEN.

This is a big hit and I highly recommend you give it a try!
