Chocolate Chip Vanilla Cake
Ummm, hello ...
Both of the kids had birthdays in December ... the Boy's turned 22nd and then the Princess turned 24. How on earth have they gotten so old???
Needless to say, we were pretty slammed from mid November up until Thursday, January 1st. I've never been so dang happy for that day to roll around, honestly. This has been one LONG and TOUGH holiday season!
Since I was home on Friday (yeah for me!) and the Princess was home sick (still, boo for her!) I could not do my usual jammin the Pandora stations I like ... so I had to keep it low key and stay the responsible adult. Ugh.
So, I took down all the Christmas decorations from the kitchen and living room ... I still have the Florida room and the bar/guest kitchen to tackle but that's for this weekend.
Then I cleaned out ONE shelf in the pantry. I think I tackled the ugliest one first and was surprised at what I tossed (um, Ritz crackers, you are so on my sh*t list now ... the sleeves were all opened at the seams!)
... and then I was feeling ambitious enough to make some soup for the Princess AND a cake too!
Yes! And it was only 11am! Sweet momma, I'm so motivated! ;-)
This sticks with my Pantry Challenge as I had everything on hand ... yeah! Although, the egg situation will most likely not last a whole week ... that and we are out of milk ... there will be a run to Aldis before long.
Ok ... here's the cake ... the soup recipe will be up later!
1 box of yellow or white cake mix (I used Vanilla cuz that's what was in the pantry, doh!)
2 eggs
5 tbs butter, melted
1 bag of chocolate chips (I used milk chocolate, next time will be semi sweet)
Yup, that's it.
In medium bowl, use an electric mixer and blend the cake mix, eggs and butter til well combined. Fold in the chocolate chips.
Grease a 9 x 13 cake pan well and spread batter out evenly ... it's going to be nice and stiff so work it in the corners!
Bake at 350 for about 30 minutes til golden brown and firm.
Let it cool a little bit and then cut into small squares ... serve up and try not to burn yourself if you decide to try a piece right away!
Hey, don't blame me if I just ruined your Whole30 / 21 Sugar Detox / Healthy Eating Resolution ... I'm in the middle of a Pantry Challenge and have my own issues! ;-) ... Better yet, maybe just pin this til you are all done with those above mentioned resolutions, or for a special occasion!

Yum! I have heard this called Bugs Bunny Cake but not sure where it originated! Looks good..its only Jan 5th and I am like how many more days to I have to keep my resolutions?? :)

DeleteOh my -- that cake looks wonderful! I think I'll add it in this week for dessert. My kids are just about 5 years behind yours. Can't believe how quickly they've grown up ...
