Whole Foods Score

I stopped to pick up some cilantro and mint and browse all the pretty, picture perfect produce ... ended up picking up one cubano pepper, 5 pablano peppers (for my stuffed peppers coming soon!), and then wandered to the meat department as they had the 85/15 ground beef for $3.99, grabbed 2 lbs.

Then, I looked at the fresh packed chiller ... which I never do as that stuff is EXPENSIVE ... and spotted boneless, skinless chicken thighs.

I save my purchase of same for Costco, I can never find it cheap elsewhere.

WRONG. Tonight, Whole Foods had the vacuum packed stuff for $1.69 a pound. Really.

So I scooped up 6 packages (about 18 lbs worth?).  And spent a total of $61 after tax and all (oh, yeah, a quick stop at the salad bar to grab some romaine lettuce) ...

So, I get home and notice that the packages had all been relabeled.

They are labeled as WHOLE CHICKEN. Not boneless skinless chicken thighs.

Out of curiosity, I peeled off the label for the old price.

$3.79 per pound.

Yup. That's more like the Whole Food pricing. I'm wondering what happened and why someone re-priced them? Sell by date is March 5 so that was fine too.

My point is, pay attention and do look at the pricing. I just got so dang excited :)

Yup, I have lots of chicken again. Believe I will be whipping a dish or two up in the crock pot very soon :)

Happy Shopping and keep your eyes open!

The Price of Gas

Is giving me serious pains this week ...

$3.99 for regular.

$4.19 for premium ... which is what Brutis and the Hemi reqire. Thankfully, I get to use regular, but even then, 30 gallon tank is quite a chunk of change if I have to fill it up.

So ... what are YOU doing to offset the big chunk of change being put towards gas, AGAIN.

I say AGAIN, because geesh, didn't we just go through a huge price increase, only to celebrate when it got down to something ridiculously low like $3.29?? Does anyone even remember when gas was under two bucks??

Ok ... enough ranting.

Here's what I'm doing:

1.  Doing the grocery store run after work, on my way home. I normally do this anyways but now much more conscientious about it.

2.  Once that car is in the driveway/garage at home, it stays there until I need to go to work the next day (Monday through Friday). I also try to keep it parked on Sundays.

3.  Saturday is normally my day to go see my dad. So to break up the boring 30 minute drive in each direction, I normally stop at the produce store on my way home, eliminating another, out of my normal way stop at a produce store.  I need to start adding the stop in the morning at the 'farmers market' which isn't really a LOCAL farmers market, so to speak.

4.  I had to rearrange my budget for gas. Not at all pleased with that. Was able to get away with $40 to $50 a week for a while there. Now, I'm not even sure ... I don't think I've EVER paid over $4 for a gallon of regular gas. $60? That gives me about 15 gallons, and I only get 10 to 12 miles per gallon so eh, that's not gonna cut it most likely, you think?  Also, try never to let the tank get below half. This keeps the sticker shock from really hitting me :)

5.  Considering car pooling with Hubby one or two days a week. My only issue with this is that he's never, ever, consistently on time :)  I knew this when I married him and have tried real hard to change this bad habit with no luck. So ... those days when I need to work late, he's ready head home early and those days when he needs to work late, I am ready to head home early. So ... really, we could work something out, I suppose (he works a few miles or so down the road from me).

Not so drastic, but really, if they keep climbing, things will have to be changed.

What are you doing?

Menu Plan Week 9

It's really the last week of February! Time is just flying by and I really don't know where the past 8 weeks have gone ...

All the goals that were made at the beginning of the year ... how are you doing on them? I am doing well with the decluttering aspect but all the others are sort of hanging in limbo, waiting for some kind of motivation to continue, pick up or plain start out! That's why resolutions should be banned ... the disappointment factor is HUGE.

Hubby is traveling this week ... which is just as well as I am swamped at work ... not to mention, I have standby jury duty on Thursday, the last day of the month AND 5 closings slated. Uggg. And I won't know until AFTER 5pm Wednesday if I need to report to court. Nice system, don't you agree? I can just see my attorneys again: tell the judge our names ... that should give you some leeway. Yeah, right. Last time I did that, the judge offered to call them and 'remind them of your civic duties'. Ok dokey.

So ... freezers are looking good ... need to go take pictures to prove it! And since it's just ME, Kitty, and occasionally, Princess ... we should be good for a minimal amount of shopping this week, so we will use what we have on hand ...

I always hate making a big meal before Hubby travels, as that leaves a ton of leftovers for ME to deal with ... not that I have anything against leftovers, just not the same thing for days on end!  Besides, it's the perfect opportunity for me to dig and eat some mangoes and avocado inspired dishes! Woohoo, 2 times in one month ... life is so good!

Because I KNOW I have a busy week ahead of me, I had planned to try and get quite a bit of prep work done on Sunday, like making some chili for a quick lunch or dinner and prepping the veggies since it's going to be a heavy week for same :) ... oh, and I needed to make more mayo since Hubby used the stuff in his pasta salad AND tarter sauce ... good grief :) ... but we got busy doing other things, like checking in on the Daytona 500, laundry and just general laziness that NOTHING got prepped ahead of time ... so now my week will be extra busy ... this healthy eating does require a tad more effort and time in the kitchen.

I am making every stinking effort to stay away from grains ... my hands have really been bothering me and I was so sick STILL that I finally went and got a z-pack on Tuesday from the doctor. Double ear infection, sinusitis AND bronchitis. Really. I must have been a walking mess but if it goes back to that other "illness" they think I have, I really need to get back on track and take care of myself!

Sunday - leftover chicken thighs and pasta salad for Hubby, I had an Evil Jungle Salad with leftover steak ... yummm

Monday - Chili ... will be enough for a few lunches this week AND maybe get a few single servings put in the freezer

Tuesday - the elusive Stuffed Peppers ... bought new peppers as the one's I have currently will need to be eaten by then

Wednesday - Island Shrimp ... I may be doing some extra chopping tonight if the 5:01pm phone call says I have to report to court in the morning for Jury Duty ...

Thursday - Simple Shrimp Dish ... only because I have the WHOLE bag of shrimp to use up (which leaves me one bag left, I think)

Friday - Hubby comes back this evening ... I'm not sure what time (as of now, when I am typing) so I'm just gonna fire up the crock pot ... Salisbury Steaks

Saturday - Hubby's choice ... friends over most likely

So tell me, jury duty. Ever been selected to sit? And if so, how was it? I guess because I work with attorneys I don't find it fascinating ... but I suppose it would depend on the trial? Last time I was called was for a tobacco lawsuit and I had quit smoking about 2 years before that ... I am SO glad that I didn't get picked for that!

Ranchy Chicken in the Crockpot

*This is a repost from a while ago but it's what I'm planning for Wednesday's crockpot meal ...*

I wanted to type Raunchy Chicken but figured not too many people would find it funny UNLESS you knew me and my friend Cat ... Cat always has a hard time putting the right word in and most likely would have said raunchy ... especially if there had been a glass of wine or two involved.

Any ways.

The original recipe is modified from the Real Mom Kitchen ... (which, thanks to Pinterest, I've discovered!) and since I had chicken on hand, figured why not? Bonus for me: I had EVERYTHING on hand ...

So, I give to you, my readers, fans, followers, stalkers, what have you:

Raunchy Chicken

6 normal size b/s chicken breast (freezer)
1 packet of dry ranch dressing seasoning mix (Aldi's for i think 49 cents?)
1 can of cream o' chicken soup (the real deal, Campbell, picked up for ... 50 cents with coupon ... and HEY ... if you have a real suitable substitute, I'm all ears!)

Toss all in crockpot, cover and cook on low for 6 hours. Yeah, that's it! Of course, if you are thinking clearly, you will toss the soup in the pot, then the ranch dressing, give it a quick stir, then toss in the chicken, sort of bury them a little and then walk away.

Ummmm... yeah, too easy, huh? When serving, feel free to sprinkle with some chopped parsley to make it pretty and special =D
