Warmed Cheesy Onion Dip

I made this for the boat parade party, a month ago ... and was so bummed that I didn't really get to try it before it was devoured ... damn mini adults ... they just sat around and ate EVERYTHING ... so I've had it on the list of things to make again and try when there wasn't a mob of people around ...



So I did it again on Saturday night when we had some friends coming over ...

Ummm, HELLO. This stuff is addictive. Normally we do not sit on the barstools at the counter when we have friends over, we generally STAND around ... the game was on in the kitchen so we were STANDING around watching the 5th quarter and next thing I know, 2 of the friends are SITTING on the barstools, right smack in front of the dish and just scoopin this stuff up ...



Trust me, the one guy is Mr. Health Conscious and does not just eat stuff to nibble on ...

It's damn good ... give it a try!



1 cup of mayo (used my homemade stuff)
1 8oz pkg cream cheese, room temp and cut into cubes for easier mashing
1 regular size SWEET VIDALIA onion, diced (first time I used a regular onion and it was apparently still good ... the sweet onion is much better)
1 cup shredded parmesean cheese (the real stuff)
generous sprinkling of black pepper
generous spinkling of dried parsley

Add all to a large bowl and mix well. Really mash the cream cheese as it will want to stay chunky.



Spray a shallow baking dish with nonstick spray and cook 45 minutes or so at 350 til nice, bubbly and brown.



Serve with a thicker tortilla chip or hardy cracker (not a thin ritzy time thing, flavors don't compliment each other)

Seriously, I was surprised at how fast this disappeared. You may want to DOUBLE the recipe so you don't come back to an empty tray within minutes.
