Smokey Crock of Pork

My creative juices are just not flowing this morning .... not sure what the issue is ...

I do know that calling this Crockpot Pork, or BBQ Pork wouldn't be any more exciting, and hopefully, by the time I finish getting this post ready, I'll have an even more creative name besides a Smokey Crock of Pork.

How about A Crock Full of Pork? Eh.



Naming the stuff may not be easy, but PREPARING it is ... and well, it's probably nothing NEW by any means, but I've never made MY pork this way ... and even Hubby, who always feels the need to take over the end results, left it pretty much alone.

Certainly, a close running to a local bbq joint, Texas Hold Em BBQ Pork, without having to fire up a makeshift smoker ...

Ready?

5-6 lb pork shoulder, butt, bone in
1 tbs salt (I used this Himalayan stuff, just because I had it)
1/2 bottle of liquid smoke
3/4 cup water

That's all you need. Seriously.

Trim pork of any excessive amount of fat chunks. But don't trim all as you need it to keep the stuff moist. Don't worry, it will come off before you shred it up.

Toss the hunk of meat in crockpot. Sprinkle with the salt, and feel free to add a little more if desired, and then give the butt a good rub down. Oh, you have a shoulder? Give it a nice massage, just to make sure the salt is sticking to the meat.

Pour the 1/2 bottle of liquid smoke over and around the meat.

 Hubby calls this Liquid Gold

Pour the 3/4 cup of water around the meat (I didn't pour OVER).

Put the lid on the crockpot and set it to low.

I put mine in like 7pm at night and the following morning, before I left for work, it was falling off the bone, so 12 hours or so is perfect.

Take the meat out of the crockpot and drain all but about a cup of the juice remaining.

 This wasn't all the pork but I had to get down and dirty after this
 
Pull meat apart, shred with 2 forks or chop, whatever your preference is. Toss the bone (amazing, isn't it?) and put all the chopped/shredded/pulled meat back in the crockpot. 

Taste the reserve juice to see if it's overly salty. Add a bit to the crockpot for moisture, and if desired, grab some of your favorite bbq sauce and add a little. Stir well to combine everything.

NOW ... you can eat this any way you want. We had friends over that night, so we did sandwiches on toasted kaiser rolls, a slice of smoked provolone cheese, and topped it with coleslaw. Really wish I had made the sweet potatoes fries to put on top of it all, but we got to busy socializing and well, just forgot!

May not be pretty but man it was delicious!

You can also eat this straight up, just like the veggies or over a bed or rice (not really rice!) or pasta. Heck, I preferred it straight up, the flavors without any other distractions was pretty awesome!
