Cinnamon Bun Pancakes

No need to get fancy or creative with the title this time around. The recipe is simply: CINNAMON BUN PANCAKES. Yes. I felt the need to shout that out to you ... just in case you missed it ... Easy folks. So stinkin easy. I made these for Sonny Boy this weekend as he was looking a little on the thin side, in my opinion ... and well, he's my boy ... They are so very easy to make and what can I say, delicious on top of it ... 1 1/2 c white flour 3 tbs sugar 1/2 tbs salt 4 tsp baking powder (um, mine has the date of April 2011 ... its on my list) 1 tbs cinnamon 2 eggs, beaten 1 cup milk 2 tbs maple syrup (used the last of the real stuff) 1/4 c melted butter 1 tbs vanilla Whisk the dry ingredients in large bowl. Add liquid ingredients and whisk til well combined Heat griddle til water bounces around when a drop is tested. Menu Plan - Week 48

Happy Monday ... it's time to plan! I got Sonny Boy back home on Sunday so nothing got done around here as far as food prep goes. I do know that  I need to get focused and stay on track. Going to try and use up what we have on hand STILL with a minimal trip to the store for salad stuff, milk, eggs, and laundry soap. Doesn't that sound like an exciting shopping trip? I had planned to stop at Costco on the way back from dropping off Sonny Boy since I'd be somewhat closer to the store on my way back ... but they close at 6pm and well, that would have been pushing it to get there in time. The thought of getting off the interstate and driving inland, and then be disappointed by a store that was CLOSED just kept me heading south, towards home. It's a good think in the end, but I will pay twice as much for the salad stuff and eggs. Not a very happy thought. So here's what I'm planning: Sunday - leftover Hot Browns . I'm not a big Thanksgiving fan ... me and Hubby had actually laid in bed the other night til 2am talking about memories. My only real vivid memory is the scolding, ridiculing and just plain misery as I wouldn't eat any of 'that' food when I was a kid. Picky? You bet. Which is why I can sympathise with Sonny Boy and why I always make sure to make a large tray of mac & cheese ... just one of those things that I can so relate to ....  Crappy Crappy picture ... does NOT do justice to the food! I like turkey nowadays ... thankfully, but after 2 full days of breakfast, lunch AND dinner, I get a little fed up with it ... so after we had this at the Brown Hotel a few years back, I had kept it tucked away in the back of my mind ... Menu Plan - Week 47

It's that week ... the one where everyone gets all giddy about the BIG feast! Me? Not so much. I am NOT a huge Thanksgiving fan ... the food doesn't do a whole lot for me ... but as I've gotten older and learned to cook 'better', it's been more of an experiment ... One of our best friends is a HUGE Thanksgiving fan ... he grew up on a farm and that was like the end of harvest time and for that family, it was a BIG event ... so John always gets me hyped up ... even if I don't do the cranberry/stuffing stuff ... fry me a few turkeys and I'm good to go. Hubby and I went to the store together on Saturday ... not always a smart move: $35 at GFS (includes a 13 lb turkey) and $119 at Publix (includes a 19 lb turkey) ... I will still need to buy bread and rolls and a few other things (tin pans ... how did we forget the tin pans?) Revisted Chicken Tuscan Garlic Style

I haven't made this in a while and when I pulled it up again, I was like "wow, this stuff was delicious" ... I didn't get around to making it again as too many things did NOT go according to plan last week ... but it's definitely on my radar now to make asap ... So here you go ... let me tempt you to try this! Here's what you need ... 2 large chicken breast - butterflied (simply slice in half all the way through so you have 2 thinner pieces) 3/4 cup flour 1/2 tbs salt 1/2 tsp oregano 1/2 tsp basil 1 tsp black pepper olive oil (5 tbs total, but I know I don't use that much) 4 cloves garlic, minced (hopefully you been prepping your garlic!) 5 sweet mini peppers, finely diced, or 1 regular colored pepper 6 ounces fresh spinach 3/4 cup half and half 3/4 cup milk 2 tbs corn starch 1/2 cup chicken broth Ready to make some yummy chicken stuff?
