Chicken Crust Pizza - Grain/Flour Free!

Hey! Are you ready for a new to ME recipe?


One that would be gluten free, grain free, low carb, keto?

Not so much Paleo (cheese baby) OR Whole30 (just because!)


How about just good and different?? That works for me!

Me and a girlfriend planned a cooking session for Saturday afternoon since Hubby was out of town and I was on a mission to use up some protein from the freezer (we are looking to get new appliances in the main kitchen to up the house sale-ability and will get rid of guest kitchen fridge/freezer, move the main kitchen fridge over there) ... I have 4 pkgs still of ground chicken that I scored a while ago from Target so why not have this to just play around with? So many things changed and I ended up making this on Friday night (just me, the cats and that lonely can of sparkling wine from Trader Joe's) while I pre-cooked some bacon. I'm glad I did as it was so stinking good! Yes, I will share a piece with my girlfriend in the middle of our kitchen session!

Here's what you gotta do:

1 pound of ground chicken (use white meat only if you can, otherwise you'll have a lot of fat to drain off)
1/4 cup of shredded parmesan
1/4 cup of shredded mozzarella
*or just use one of these little bags already premixed*
1 tbs italian seasoning
1/8 tsp garlic powder

Turn your oven on to 350 degrees. Hey, open it up and make sure nothing is hanging out in there first!

Line a baking sheet with some parchment paper. While you are at it, tear another sheet the same size off and set aside.  You really need to ditch the plastic wrap and get the parchment paper in your kitchen. Just saying.

Toss all the ingredients in a large bowl and mix well. It will mix together pretty easy as ground chicken has a different texture than ground beef. Another great thing for the kitchen? Disposable plastic gloves. I stocked up back during the Ebola scare days and use them for everything!


Dump the chicken mix on top of the baking sheet and pat out to the edges. Place that second piece of paper on top of the chicken and just smooth it out with your hands. DON'T grab the rolling pin like I started to do because it will seriously just smoosh and slide! Oops! You can easily smooth it flat, trust me!
 

Bake for about 20-30 minutes or til golden brown. You can flip it and get it colorful on top too if you'd like OR broil a few seconds but really, keep an eye on it. *If you have a lot of fat, just drain it off* I thought I was going to but it cooks off AND I cooked mine for 30 minutes. I was a little sad to see it shrinks a bit so just remember that!


You can either dress it now and continue baking til your toppings are melty and warmed through OR let the crust cool, wrap in whatever you want (that damn plastic wrap!?) and stash in the fridge for a day or so AND THEN you can cook your pizza!

I opted to continue on right than and there so I added some Trader Joe's sauce, topped with the rest of that bag of cheese and some pepperoni. Tossed in the oven for about 10 minutes more at 350 and it was ready!


Let cool for a few minutes and slice.  You will be able to pick it up with YOUR HANDS! O M G!!! I only ate 2 pieces because I was wondering how piggy it would be to eat 1 pound of ground chicken with cheese and pepperoni ;-) Just for kicks, I stuck 2 pieces in the freezer for a later lunch and the rest is in the fridge for a quick breakfast or lunch!

Go ahead ... step outside your comfort zone and make this! It's not weird and look, you don't need a fork and knife!
