Simple Corn Salad

You know that we watch FoodTV on Saturday and Sunday mornings, right? I mean, really, doesn't everyone have a tv in the bedroom AND kitchen?? Ok. Maybe not. But you should! This recipe was pulled from  Trisha Yearwood's FoodTV  episode ... It's like a lot of other recipes I have, but once again, something triggered my attention enough to make me go online and look up the basic recipe ... and here is what we did! 1 can regular yellow corn, drained 1 can white corn, drained 1 small can diced green chilies, drained 1 small can sliced black olives, drained 2 tomatoes, rough chopped 2 jalapeno peppers, seeded and chopped 4 green onions, sliced thin 3 tbs vinegar 1/3 c olive oil zest of half a lime (zest your lime before you squeeze!) juice of half a lime 1/4 tsp salt 1 tbs chopped cilantro Mix all except cilantro in medium size bowl and chill for a minimum of 1 hour.  Prior to serving stir well and add the cilantro. So, hey, I'm sitting up here in Northwest Indiana freezing my booty off ... I was excited about some cooler temps but when I checked from Florida, it was like a high of 70 and low in the mid 50's. Uhm, weather people are sooo clueless ... it's a high of 50!  I suppose I should take a new picture and make it pretty, huh? My father in law is diabetic. And swears that he doesn't really dislike anything. Except chicken breast.   Honestly? He's opted not to eat the protein one night becuase it was chicken breast. To be 100% honest it was Ranchy Chicken in the Crockpot. With LOTS of gravy/saucy stuff.  Wouldn't eat it. Opted to just eat the buttery egg noodles. I think I may have given him attitude for a bit there.  Anyways, I'm trying again. Cuz, you know, I'm all about showing people that good food is easy to make.  Uh huh. And this recipe is SO EASY! Steak Salad aka Evil Jungle Salad

Are you all enjoying the Salad theme this month?  I am! I'm digging out an old favorite that I haven't made in quite a while and feel the need to do it real soon!  I call it a Steak Salad because, well, because it has STEAK in it. Others call it an Asian Beef Salad because it has soy sauce and sesame oil in the dressing, making it an Asian type dish. Then the Evil Jungle? Well, that's from Houston's which is WHERE I got the idea for this lovely, all time, must have lunch/dinner and hey, even breakfast once. (Evil Jungle is very very spicy with a Thai undertone to it and mangos and avocado slices to offset the spiciness. I've never been able to replicate 100%) My steak comes from Costco, and it's in a bag, already cooked, ready to serve. Um, yeah, I know. I had the Food Network channel on in the background Sunday while I was shredding cheese and carrots for a soup I'm making this week ... and the  Pioneer Woman  was on ... need I say much more? Side note: I prefer to read her blog instead of watching her. I don't know what it is but I wonder if I'm the only one? Just watching her takes away some of the mystic of living on the ranch with kids and cowboys, dogs, cows and horses ... but I'm glad she's on as I'd never have caught this recipe! Heat 3 tbs olive oil and 3 tbs butter in a medium size skillet Once melted, swirl around to mix a little and dry off 4 thin sliced chicken breast. March Salads is trending hard in the house!  This is a FAVORITE of mine and I make it whenever the Boy is not around and Princess is ... not as often as I'd like since she is now a married woman and before long will be 2 1/2 hours WEST of me ... ::sob:: DID YOU REMEMBER TO SET YOUR CLOCKS AHEAD?? Hubby is NOT a fan of this ... once I added the diced avocado and mango, I knew it would be an eye rolling, stick a finger in his mouth gesture ... so again, MORE FOR ME! Hey, I know  it's still considered Winter but Spring is right around the corner and THEN It's summertime! Which means, BBQs, pool parties, friends, beers, more parties, boating, floating, oh, and more BBQs ... which means as either a hostess OR guest, you need to have a few, quick, toss together salads to provide for those hungry people coming to your house or that you are going to see ... Ahem. Really, all I'm saying is that  this  is that salad you want to have on standby for those upcoming events ... because you know that there will be at least ONE opportunity to make this and impress ;-) AND even better? DIY Blue Cheese Dressing

We love blue cheese dressing in this house ... nothing better than a bacon blue cheese burger ... oh yum! But of course, if you take a peek at that label on the back of that Kraft Salad Dressing label, you will find quite a few things that you have no clue what they are! As I'm getting older, I'm a little more concerned about what I'm putting into my body ... It's funny how people react to blue cheese! Some people love it, the bluer the better ... others, like me, prefer not to see so many blue veins running through ... and then you have "those" people who will up and leave the table if you even mention blue cheese ;-) If you are one of the latter, just hit next page to skip right over this recipe, I understand! Chicken BLT Inspired Salad

It's March! The 3rd month of the new year. Seems like time is flying by and before we know it, summertime will be here! Time to dig out some salads and get some good body vibes going! This is a super yummy salad that is Whole30 Compliant, Paleo, Grain Free, Dairy Free, Gluten Free and all that other stuff BUT so stinkin' good! I promise, you will be so very glad you gave it a try! It's easy, and really, REALLY tasty! *I mean, come on, BACON?* Chances are, you have everything on hand except, maybe, the basil ...  1/4 cup olive oil 1/4 cup balsamic vinegar 1 tsp Dijon mustard 2 tbs (give or take) fresh basil chopped Boneless, skinless chicken breast (I used almost 2 lbs, 4 fat pieces) Additional basil for topping salad Mix together everything and let the chicken mix and mingle for a bit in the fridge.
