Apple Snacks!

Oh no ... it's that time of year where everything is PUMPKIN. I guess that's fine and dandy if you are a pumpkin fan.  Which I'm still kind of on the fence about.  But it's also APPLE TIME!  WHEEE!!!! I love me some Honey Crisp apples ... but dang, they are expensive! So I started doing this several years ago with Pink Ladies, Gala and a few other brands but NOT McIntosh or Red Delicious ... those are just icky not matter what you do to them! This is a GREAT snack to offer up to the kids, teens, mini adults, family, friends, even strangers!  I have not been able to eat an apple any other way since trying this the first time! Having a brunch (or in my house, just a bunch of people leftover from the previous night)? Serve up some apples! Need a healthy snack? Serve up some apples! Seriously. These are so yummy ... all the "kids" (who are in their early 20's) and adults (my friends, 40s/50s) love these things! So here you go, a repost of the o...

Cilantro Lime Riced Cauliflower

#JANUARYWHOLE30 *Repost alert! This is made all the time, even when I'm not doing a Whole30 ... it's just yummy, healthy eating!* Did you see my excitement a few weeks ago when I finally found the bags of riced cauliflower at Trader Joe's? I made a bag of that stuff that very night without any thought ... that's how excited I really was ;-) It was really easy too since the cauliflower was already riced ... all I had to do was zest a lime, chop some cilantro, juice the lime and cook the "rice". I have turned so many people on to this stuff in the past few weeks that I may never find it again at the Trader Joe's by my house! *Type 1 Diabetics should be stockpiling this stuff with only 3 grams of carbs per serving! This isn't really a recipe, so to speak, but more of a process. And I'm looking forward to making it again! A Simple Shrimp Dish

We've been working on eating down the freezers AND staying on budget. Just for the record, eating down the freezers DOES help the budget, except when you see a great sale on some frozen foods and think, hey, I've got plenty of room in the freezers for that! Ahem. It happens ;-) So, I was out of shrimp. Who would have thought that day would come? But never fear, there's always a sale on shrimp somewhere so of course, I bought more! Not stock up more, but more. We are visiting family and friends in the midwest this week and I'm offering up some of my favorite, healthy treats to share. All the kids are in high school with a few shipping out to colleges and it's sort of a bittersweet time for me in that my kids are pretty much grown up now, you know? It's summertime and I'm trying REAL hard to stay on a more healthful eating plan this month ...  This is a GREAT snack to offer up to the kids, family, friends, even strangers!  I have not been able to eat an apple any other way since trying this the first time and I make this at least 4 times each month ...
