Pumpkin Pancakes - Grain/Dairy Free

*It's October and time for the annual pilgrimage of pumpkin recipes ... so here's a re-post of one from a few years ago! I can't believe it's FALL ... I mean seriously, where has the YEAR gone already? I have a confession ... I'm not a big pumpkin lover ... sure, I'll eat them yummy pumpkin bars with the creamy cheese frosting slathered all over the top ... but other than that, no thank you, very much. Until I made this recipe a few years ago when Hubby was traveling ... and I had made it a few times since then ... but it's been a little while now ... so in honor of FALL arriving, I am re posting the recipe and making this as part of the Sunday morning breakfast for Sonny Boy before he heads back home ... I discovered Pinterest . Oh my. I've lost a lot of hours this weekend and believe I may have gobbled up any available memory with all the NEW links I've bookmarked. Whew. And I even tried a new recipe within 24 hours of discovering it ... that in itself is amazing. And that we ALL liked it? Even more so! Got the recipe from Baked Bree ... and pretty much made it as she has it but I wanted to give credit where credit is due! Not to mention, her  pictures are way better! 1 1/2 c white flour (although, you could use wheat I suppose) 3 tbs sugar 1/2 tbs salt 4 tsp baking powder (um, mine has the date of April 2011 ... its on my list) 1 tbs cinnamon 2 eggs, beaten 1 cup milk 2 tbs maple syrup (used the last of the real stuff) 1/4 c melted butter 1 tbs vanilla Whisk the dry ingredients in large bowl. Add liquid ingredients and whisk til well combined Heat griddle til water bounces around when a drop is tested. Cook til both sides are brown Frosting: 1 cup...

There's a funny family joke about the time Princess read the sign at IHOP and read what it stood for. HA ... I still get the giggles when I remember ... she was in total awe that it stood for International House Of Pancakes ... oh boy ... classic, typical Princess moment. Anyways, not sure when the last time I was there but it's been a year or so (I missed out on the free stack stuff March 1st) and remember it being quite expensive for the 5 of us that morning. Of course, we had so much more than pancakes ... so here's a recipe I've had since January 2006 (according to the little date thing at the bottom of the page) and it came from Robbie Haf website (which is STILL active!)... and in keeping with the theme of Tasty Tuesday to measure or not,I sometimes double this recipe (and heck, heaping is really a judgment call in my opinion!) 1 cup all purpose flour 1/4 cup sugar 1 heaping tsp baking powder 1 tsp baking soda 1 cup milk 1/4 cup veg. oil 1 egg or 1/4 c...
