Portabello mushroom, lettuce and tomato sandwiches

We are big meat eaters in this house and it will be interesting to see what the comments will be on this ... (Sunday dinner, serving with potato salad) Got the shrooms at Aldi's for $1.69 per package (each had 2 caps) along with tomatoes. Lettuce from Penn Dutch last week (69 cents a head). Basil & rosemary from garden (ha, what garden is that??). Kaiser rolls from bread store for 89 cents for 12. Um, yes, I am still on the pantry challenge. But the stuff I bought sticks with my challenge of dairy, veggies/fruits and bread :) 1 tsp fresh rosemary, finely chopped (garden) 1 clove of garlic, pressed (fridge) 3 tbs oil (pantry) 3 tbs mayo (fridge) 2 tbs basil leaves, finely chopped (garden) 4 large portobello shroom caps (aldi) salt and pepper (pantry) 4 crusty rolls (I'm using kaiser rolls) (freezer now) 4 iceburg lettuce leaves (boy, this is my 2nd recipe calling for iceburg lettuce. Glad I bought TWO heads) 1 oz parmesean cheese, shaved or shredded (fridge) 4 ...

Baked Potato Bar

I've got one kid who is fairly picky about food. So to find something that HE likes that everyone else will enjoy too, and HEALTHY'ier' on top of it, well, I'm all in! I buy the potatoes at Costco usually ... a big honkin 20lber. About $8. They are nice and big (size of your hand) and for the most part, pretty fresh and decent ... Scrub the taters like wild. Um, I hate to say it, but they've been living in dirt for quite a while. Prick them with a fork, or cut an x shape in the skin (don't forget to do this, exploding taters in the oven really is a pain to clean!) Place them all on a baking sheet and drizzle a little oil over them. Give them a massage with the oil, rubbing it all around. Sprinkle all with course salt. Bake at 400 for 45 to 60 minutes, til they squish a bit when you gently squeeze them. Set up your bar. Go ahead, use some nice bowls ... don't just toss the containers on the countertop :) Show a little love here: Shredded chees...

Tomato Salad with Cheese Crisp

4 thick slices italian bread, cut into cubes (or whatever you have on hand) 1/4 cup olive oil salt & fresh ground pepper 1 tbs dijon mustard 1 tbs fresh lemon juice 2 tbs white wine vinegar 2 lbs tomatoes, cut into chunks 1 bunch green onions, sliced 2 tbs chopped fresh dill (use dried if that's all you have) 3/4 cup grated cheese (gruyere or whatever else you have on hand) 1 tbs all purpose flour Preheat oven to 400. Toss bread with 2 tbs olive oil on baking sheet and season with salt and pepper. Bake til golden, 8 minutes or so. Let cool slightly. Whisk mustard, lemon juice and vinegar in a large bowl and season with salt and pepper. Slowly whisk in 2 tbs oil. Add tomatoes, green onions, dill and more salt and pepper. Add bread cubes and toss to coat. Set aside while making the crisps. Toss cheese with flour and pepper to taste in bowl. Arrange the mixture in 4 mounds on baking tray and flatten slightly (I line the tray with parchment paper). Bake til golden bro...
