Friday Night Pizza!
Because April is my Money Month (income taxes, boat insurance, house insurance, flood insurance AND wind storm insurance all come due in the next 45 days ... I need to stay focused on them little green soldiers and be lining them up to do battle for me! So I've opted to make April a Money Control Month and will be doing things, even more intentionally, to reduce my outlay of cash! Not to mention, we hosted the Princess and her Hubby's reception late February and I had a real hard time reining in the spending for March 😂
First Up is Friday Nights ... and it's all about Friday Night Pizza!
Tada! I give you Pizza Bread!
This post was shared, originally, several years ago and it was to use what we had on hand. See what an odd assortment of stores I use? Walmart (marked down bread) Pepperoni and pizza sauce from Trader Joe's (both inexpensive and the best tasting, in my opinion) and of course, cheese from BOTH stores!
Frugal Tip: Buy the marked down bread, place in a plastic shopping bag and toss in the freezer! Perfect for last minute bruschetta, garlic bread, or, in this case, PIZZA BREAD!
This is also a great thing to teach college kids to make ... it's one of the things the Boy made a few times with good results ;-)
Here's what you need:
Loaf of French bread, cut in half and then sliced in half again. IF it doesn't sit flat on the bottom, trim so it does
Pizza sauce (I am really stuck on this Trader Joe's version)
Pepperoni (again, Trader Joe's)
Shredded mozzarella cheese (I had 2 bags but only needed one)
Heat your oven to 400 degrees.
Line a large baking tray with parchment paper for easier cleanup.
Place your bread on the sheet.
Spread a generous amount of pizza sauce over the top of bread. I just used a large spoon to do so.
Top the sauce with a generous amount of cheese, spreading it out. NOTE: if you use too much cheese, it will melt and run off the bread making you very very sad
Grab a bottle of Italian Seasoning from your spice rack if you have it ...
Sprinkle the cheese with the seasoning IF you have it ... if not, no worries
Now lay on your pepperoni
and add on just a little more cheese over the top
And then bake for 15 minutes of so until the cheese is melted and all bubbly ...
This was a quick, frugal and satisfying dinner! I served a garden salad along side (iceberg lettuce, sliced cucumbers and sliced red peppers) ... I'm thinking I need to put this on my meal rotation list!
