VitaMix Time - Salsa!

Yup. Another tried and true Pinterest recipe! Imagine that!

Has anyone made anything from Pinterest that didn't follow through? I hate when that happens. There are times when I'm breezing along through a new recipe and just KNOW that something is missing. Most of the time I can catch it, but those few times ... arrrggg ... makes me mad that I just wasted food, time and, in the end, money!!

This recipe is a keeper, tried and true, I promise!!

And so super easy. Healthy, I'd say ... and after it sits for a day or two in the fridge, you will want to devour it all in one sitting.

I've not tried this with my famous nachos since I'm avoiding that certain type of food ... but the mini adults in the house right now say it's pretty tasty ... I've used it on eggs, tacos, chicken, you name it, and it's good ...

And even better? It's a blender recipe ... or in my case VITAMIX!

Ready to give it a whirl? Here's what you need ...

1 can of diced tomatoes
1 can of Rotel (I use the Mexican style with lime, cilantro)
1/4 onion
2 cloves garlic
juice of 1/2 lime
1/2 tsp cumin
handful of cilantro
dash of salt (omit or add more to taste)
whole jalapeno if you like it hot (remove seeds to mellow a bit but still, this will up the heat factor)

I was playing around with another camera that belongs to Sonny Boy (he left it here for me) and it's not the usual point and shoot ones ... this is tempting me to find a photography class as I just can't seem to get this picture taking stuff down!

Toss everything in your trusty blender and let it rip til it's the consistency you like. Hubby hates chunky cooked tomatoes so mine is fairly smooth ...



The original recipe I had called for sugar. I'm not quite sure why as I haven't added it yet, and everyone agrees it doesn't need it. AND this is Grain Free (double check your labels on the canned items, they should really only contain the basics!)
