Paleo / Whole30 Side of Slaw

Image
Hey! How many of you are looking to do a Whole30 come January 2018?  Paleo? Just Real Food? Well that's just GREAT because I have something to share with you that will bring a little ray of sunshine to all that new food program! *Just a side note, I'm not sure yet what I'm doing come January but do know I need to get my stuff together and soon! So let's talk about coleslaw for a minute. I avoided the stuff for years and I do mean YEARS. I didn't like the massive amounts of mayo that was in most mixes OR the sugary stuff either. It was just icky in my opinion. The mere thought of that cabbage loaded with mayo would make me gag. Seriously. How nice, huh? Now? I looooooove a good slaw ... but no, not when it's just a mess of mayo and shredded cabbage tossed in a bowl and called Cole Slaw. No thanks. So today, I'm giving you the most simplest, cleanest version of cole slaw you can find ... and please, don't judge my c...

Breakfast Bistro Box

Image
Ahem ... I may have a problem here! The Starbucks Bistro Boxes have consumed my life...every waking moment I think of them, wondering what else I can make to make MY life a little easier and I suppose, cooler ... cuz we all just want to be cool and liked, right? Yeah. Whatever. I think it's more of a fascination that these things are scooped up like crazy. Since the first one I posted here I've been seeing these Boxes EVERYWHERE! No joke. So ... how about a Breakfast Bistro Box?? I don't know why I hadn't ventured to making BREAKFAST a meal prep priority ... those mornings when I'm running late and just grab an apple are gone forever! 8 eggs 8 slices of bacon (for those of you who really like bacon, feel free to cook more) Green beans (because my breakfast is NOT complete without green beans) or other veggie (broccoli runs a close 2nd for me along with riced cauliflower) Red grapes or cuties or whatever "stable" fruit you want *optiona...

Winter Blend Veggies

Image
I try to eat veggies at all three meals. Generally, breakfast would consist of green beans, eggs and bacon or chicken apple sausage. That started back when I did my first Whole30 ... and it was a habit that just stayed with me. Breakfast Meal Prep *gosh, have I not shared this yet??* Now that it's winter time though, green beans are not really in season and quite honestly, frozen green beans cook up too mushy for my taste. I prefer they have some crunch still. So lately, I've been grabbing frozen veggies from Aldi and Walmart ... $1.09 Aldi   $5.88 each Walmart Walmart also carries a mix of broccoli, cauliflower and carrots for $5.88 ... and these are large bags. Hubby is not a fan of the carrots and I never was either until recently ...  Anyways. Some people think I'm weird because I eat these veggies at breakfast. But I know that is my BEST time to get veggies into my day! And I have a super easy way for you to make these in the morning witho...

Beef & Bok Choy - Crock Pot Style

Image
Ready for another crockpot recipe! Good! I made this a few months ago again and well, although it's still not Hubby's favorite, I liked it so I will share with you again ... OH! And if you use the coconut aminos instead of the soy sauce, you will be Whole30 compliant and Paleo as well ... just thought I'd share that with you! I modified it to what we had on hand ... of course! 2 1/4 lbs London Broil 1/2 cup beef broth 1 whole onion, cut in half and sliced 1 tsp chopped garlic ( are you prepping yours? ) 1/4 cup soy sauce (I used coconut aminos as I'm trying to do a little healthier and avoid soy!) 2 tbs of sesame oil 2 tbs minced ginger (from tube) 1 tbs minced red chili pepper (from tube) 5 cups or so of bok choy, chopped green onion, sliced, for garnish (optional) Sear beef in skillet just to brown both sides, move to crockpot. Add onion and saute til starting to turn translucent and then add garlic. Stir around for about 2 minutes and dump thi...

Creamy Potato Soup

Image
We are seeing some cooler weather, by our standards, so I'm back to making soup again!  What? You don't call 75 at 6am cooler? You do NOT live in Steamy Paradise, do you?? We are counting down our days for our first REAL cold front to come through!   Now, THIS soup is yummy and I get really excited when I'm making it ... its just a little bowl of pure comfort food to me ... yummmy .... yeah, I'm also sooo over turkey at this point! The last few times I made this, I switched it up a little and used the refrigerated steakhouse seasoned diced potatoes .... I really liked the seasoned taters and plan to stick with that from here on out! Another thing I have to point out: toppings. I love toppings, but then again, I love a loaded baked potato ... so that's how you need to look at it. Do you like bacon, cheese, green onions on your baked potato? Then, by all means, add those to your cup of soup. Otherwise, eat it naked and make feel a little healthi...

Turkey Round Up!

Image
Confession ... we aren't frying a turkey, or six, this year. Our friend is roasting a 21 pound bird and we will eat it at our house ... WHAT!? I remember last year our usual partners in crime spent the holiday back at their home states, Princess was in California visiting her fiance's (now her husband) father who has been there for a year receiving chemo treatments (who passed away that December), my dad had the flu and the boy and his girlfriend were vegetarian (still are) and doing something Veggie Like. And then I got the text message from my best friend in Bethany Beach that her mom was admitted to Hospice End Stage (which has just broken my heart for both her and her mom) ... which left me and Hubby ... WHO, by the way, was wearing a boot and waiting on x ray results on his foot ... this year, thankfully doesn't have all that drama ... a few things, but nothing like that! This year's only excitement will be the pregnant lady (Princess), only one partner in ...

Loaded Baked Cauliflower

Image
Hey! I've been a little MIA this past week ... sorry about that!    I  did  have a few recipes that I wanted to share for the big feast coming up on Thursday but life has, once again, interfered with my good intentions. So, hopefully, you'll have everything on hand to give this a try ... if not on Thursday, maybe Saturday or Sunday when you start to get really tired of those leftovers ;-) As I'm sure you've noticed, I've really started to try MORE veggies and so far, so good ...so here's to this yummy dish that I picked up over at  Skinny Taste  ... with modifications, of course ...  This is how I made it on a fine Saturday afternoon ... you should too! 24 ounces of cauliflower florets ... I love Costco for stuff like this (or 6 cups worth or use the bagged riced stuff!) 1/4 cup or so of bacon bits (again, great Costco buy!) 3 cloves of garlic, sliced 1/3 cup milk (I used 2%) 1 tbs butter 3/4 tsp sal...
