Honey Mustard Dressing - Dairy & Grain Free

*I made Cobb Salads for Hubby and I this past week and was so glad that I opted to make mine with Honey Mustard Dressing! I'm sharing the recipe again as it's been a little while and it's always great to have some quick recipes to throw together at the last minute! It's NOT Whole30 approved BUT it is Paleo with the lack of dairy, grains and of course, processed sugar!* I love making my own salad dressings ... I have a much better handle on what I'm consuming when I do so. You know that MOST shelf stable salad dressing are full of funky ingredients, right? So why not just take a few extra minutes and make your own and be healthier? This is a dressing that I've been making for several years now. Back in the day, it was all about Kens Honey Mustard Dressing ... until I started reading labels. Whoops. The 2nd ingredient was HFCG. So ... I had to pretty much kick my all time favorite dressing to the curb. *See how it says "Great for DIPPING"??...

It's been a while since I made this and since it's on the menu this week ... I thought I would renew the post ... always good to bring them up to the top again!   I do consider this to be a frugal meal as I almost always have bacon and chicken on hand ... throw in some pantry staples of canned shrooms and whatever cheese you have on hand and YES, it's frugal if it kept you cooking in your own kitchen!  This is seriously something that you would order in a restaurant and I bet, $14 and up is the going price! The recipe is pretty simple:   Boneless skinless chicken breast, cut them in half (butterfly) so that you have two thinner pieces (I almost always use 3 pieces of chicken to create 6 total) Bacon ... about 2 to 3 pieces for each piece of thin chicken (in my case, 12 slices) Cheddar cheese, either shredded or slice, whichever you have Provolone cheese, shredded or sliced. You really can use any kind of cheese you want! Mushrooms (optional, I us...
