Beef & Broccoli

It's been a LONG time since I made this recipe ... about 2 1/2 years I'd say so why not make it again! I originally made this while I was under a Pantry/Freezer Challenge and even though I'm not really on one at this very moment, it's perfect in that I've got everything on hand and we are trying to really reduce our spending lately. Here's how I made it ... keeping it healthier my way ... 2 - 2 1/2 pounds of boneless beef of any sort. I used some large sirloin steaks that were in the freezer from Costco 1 bag of broccoli (I used half a bag of the fresh stuff from Costco) 2 cups beef broth (pantry) 1 cup of coconut aminos (update, I opted 1/2 cup garlic sauce and 1/2 cup of coconut aminos) 2 tbs sesame oil (pantry) scoop of diced garlic Dash of red pepper flakes (depends on how spicy you like it!) 4 tbs arrowroot 8 tbs of the sauce when done cooking Mix broth, garlic sauce, coconut aminos, sesame oil, garlic and red pepper flakes in the crock. ...

Repost from SEVERAL years ago but I think I'm putting this on the menu real soon ...  The Boy and his girlfriend love Chipotle ... to the point where they had to take a break as the employees knew exactly what they were going to order since they were going so often ;-) Of course, I'm like, good grief kids, that gets expensive after a while and we can get a pretty close replica of that at home! Whole30 General Tso - Crockpot Style!

When you got a long day in the office, it's nice to come home to a home that smells like dinner is ready to be served ... Doing the Whole30 will sometimes make you feel like an outcast ... it will be a little difficult to go out for dinner and drinks with friends, and forget the fast food or take out joints! BUT ... this might, just maybe, fill that void! Grab yourself a bag of riced cauliflower from Trader Joe's (or any store now!) and you can almost call it a take out meal! 2 pounds of boneless, skinless chicken breast, cut into bite size pieces *I  strongly recommend using thighs so you won't have dried out chicken ! 4 cups of stir fry veggies (frozen is fine, just check the ingredients to make sure no funky stuff added to "preserve") 1.5 tsp of ginger 1 tsp of red pepper flakes 1/4  c coconut aminos (most grocery stores are carrying this now!) 5 cloves of garlic, minced 2 tsp sesame oil 1/4 cup of green onions, sliced thin salt and pepper t...

*It's another repost but honestly, WORTH the repost! Being January, we can all use help for a successful Whole30! #JANUARYWHOLE30 I'm willing to bet that 50% of you know who Michelle is over at  Nom Nom Paleo , and the other 50% are probably thinking "hmmm....that sounds vaguely familiar" ... am I right?? Beef & Bok Choy - Crock Pot Style

Ready for another crockpot recipe! Good! I made this a few months ago again and well, although it's still not Hubby's favorite, I liked it so I will share with you again ... OH! And if you use the coconut aminos instead of the soy sauce, you will be Whole30 compliant and Paleo as well ... just thought I'd share that with you! I modified it to what we had on hand ... of course! 2 1/4 lbs London Broil 1/2 cup beef broth 1 whole onion, cut in half and sliced 1 tsp chopped garlic ( are you prepping yours? ) 1/4 cup soy sauce (I used coconut aminos as I'm trying to do a little healthier and avoid soy!) 2 tbs of sesame oil 2 tbs minced ginger (from tube) 1 tbs minced red chili pepper (from tube) 5 cups or so of bok choy, chopped green onion, sliced, for garnish (optional) Sear beef in skillet just to brown both sides, move to crockpot. Creamy Potato Soup

We are seeing some cooler weather, by our standards, so I'm back to making soup again!  What? You don't call 75 at 6am cooler? You do NOT live in Steamy Paradise, do you?? We are counting down our days for our first REAL cold front to come through!   Now, THIS soup is yummy and I get really excited when I'm making it ... its just a little bowl of pure comfort food to me ... yummmy .... yeah, I'm also sooo over turkey at this point! The last few times I made this, I switched it up a little and used the refrigerated steakhouse seasoned diced potatoes .... I really liked the seasoned taters and plan to stick with that from here on out! Another thing I have to point out: toppings. I love toppings, but then again, I love a loaded baked potato ... so that's how you need to look at it. Do you like bacon, cheese, green onions on your baked potato? Then, by all means, add those to your cup of soup. Otherwise, eat it naked and make feel a little healthi...

Ranch Pork Chops - Crock Pot Style

*This recipe has been made so many times in my household! You can use chicken or pork as both work really well!  When Hubby comes home on Tuesday, I plan to have this going in the crockpot to make his day ;-) The very first time I made this, Hubby opted to take me out that evening so we ended up reheated this and served with some mashed potatoes and whew ... it was very very tasty! Those items above? That's all you need in addition to the pork chops.  Seriously. One packet of ranch dressing One can of cream of chicken soup 1 tsp fresh garlic chopped black pepper You are  chopping your garlic  in mass quantities, right? I mean really. All you do is spray the crockpot with spray, toss in the chop. Mix up the balance of ingredients in small bowl and spread over the chops. Go ahead and toss in any chopped onions you see in the fridge ... Put a lid on the crockpot and make yet another mental note to find a new handle to replace the broken ...

Spaghetti Squash Crock Pot Style

This is one of those veggies that I just want to LOVE but instead, I find it to be  sort of just, ok. Maybe part of the problem is prepping the damn thing and taking your life in your own hands when you go to cut it. Yeah. It's not pretty. So then I found out I could cook it in the  Instant Pot  ... sweet! But I still had to cut it. And then removing it while it was steaming hot was a little concerning. I'm such a sissy sometimes. And then came along the crock pot option. Why not? So I gave it a shot. And I'm impressed! Impressed enough to share with you how I did it! Paleo Mexican Beef in the InstantPot

I have a girlfriend coming over this weekend to do a little cooking together and meal prep work ... she's not much of a cook and is always intrigued by the stuff I make so why not make it a group effort?
