Ranch Style Pork Chops in the Crock Pot

I make this quite a bit with thick cut boneless pork chops ... it's tasty and super easy to make ... and you know me, I like EASY and TASTY! Those items above? That's all you need in addition to the pork chops.  Seriously. One packet of ranch dressing One can of cream of chicken soup 1 tsp fresh garlic chopped black pepper You are chopping your garlic in mass quantities, right? I mean really. All you do is spray the crockpot with spray, toss in the chops. Mix up the balance of ingredients in small bowl and spread over the chops. Go ahead and toss in any chopped onions you see in the fridge ... Put a lid on the crockpot and make yet another mental note to find a new handle to replace the broken one ... Set the timer to low as long as it goes. In my case, it was 10 hours, which, sorry, it was NOT going to cook THAT long ... Come home and marvel at the fact that a mere 10 to 15 minutes that morning created THIS ... a meal worthy ...

Oriental Cabbage Salad

This recipe has been around forever, and actually, my copy came from my MIL which she had copied out of one of the local women's cookbooks ... I treasure it all the more now because I always think of her when I make it and now that she's passed on, well, it's still hard. Most people like this, even if it's based on cabbage. Just an absolute delicious salad for those summer bbqs! Bag of coleslaw (or just plain cabbage, shredded, small to medium size head) 8 green onions, sliced thin 1/2 cup peanuts (or other nuts you like), toasted and cooled 1/2 cup sesame seeds, toasted and cooled 2 pkgs ramen noodles, crushed 1/2 red pepper, chopped Dressing: 4 tbs sugar. You can use a sugar substitute of choice if desired 1 tsp black pepper 1/2 cup olive oil (or oil of choice) 2 tsp salt (I've always used less) 6 tbs rice wine vinegar *or, you can do like I sometimes do and just use the seasoning packet and omit the salt and pepper* Place all veggies in a...

I love them little Barber chicken things, but you know, 2 to a box and $3.99? wow. That's expensive. Not to mention, the list of ingredients is a little frightening (AND Princess will eat TWO while holding a conversation with you). And they have served a time and a place in my life. Ahhh....what a safe standby to have on hand (need to try the cordon bleu recipe next!) So when I saw this recipe (and CRAP I can't find my original link!) I said OH YEAH, I'm so putting that on the menu! Fortunately I have everything on hand (except fresh tarragon, not even sure if I have dried, but will improvise ) since I've put myself on an extremely reduced grocery budget for the month of February. So, here you have it, the way I did it in this neck of the woods! Just a note: it did not look pretty, my buttery goodness all leaked out because I sort of cheated by using big chicken breast and slicing in half then pounding. Ummm, yeah, you should just use FOUR breast and pound them...
