Breakfast Bistro Box

Ahem ... I may have a problem here! The Starbucks Bistro Boxes have consumed my life...every waking moment I think of them, wondering what else I can make to make MY life a little easier and I suppose, cooler ... cuz we all just want to be cool and liked, right? Yeah. Whatever. I think it's more of a fascination that these things are scooped up like crazy. Since the first one I posted here I've been seeing these Boxes EVERYWHERE! No joke. So ... how about a Breakfast Bistro Box?? I don't know why I hadn't ventured to making BREAKFAST a meal prep priority ... those mornings when I'm running late and just grab an apple are gone forever! 8 eggs 8 slices of bacon (for those of you who really like bacon, feel free to cook more) Green beans (because my breakfast is NOT complete without green beans) or other veggie (broccoli runs a close 2nd for me along with riced cauliflower) Red grapes or cuties or whatever "stable" fruit you want *optiona...

Mandarin Chicken Salad

I used to love to get the Mandarin Chicken Salad from Wendy's back in the day ... I thought I was being super healthy, you know? Of course, that was before I learned about reading labels and such ... amazing how something so "healthy" could be so very bad for you. So ... when I came across  THIS  salad at  My Natural Family  not too long ago, I knew I had to give it a try ... and, man, I'm so very glad I did! Talk about an awesome, flavorful salad ... and even better, when I opted to make it at the last minute, I had EVERYTHING on hand so it fit the bill! *With summertime fast approaching which in my world means Bikini Time, even at the soon to be ripe ole age of 53, I am pulling out my favorite, healthy salad options! Here's what you need: 2 boneless/skinless chicken breasts head of lettuce (romaine) chopped in bite size pieces (I used one artesian baby romaine head) 1 red pepper, sliced and chopped in bite size pieces 1 large carrot, coarsely shredded...

Uhm, HI! I've got a confession to make ... I've only been to Starbucks 2 times in my whole life. TWICE! Which kind of makes me a not so very good copycat recipe kind of girl with this here recipe ... BUT  I did test it out on some folks who have had it and they say it's spot on! Funny, first time at Starbucks was in downtown Chicago on a freakin, blustery, late November day ... Hubby wanted to duck in to this little place and I didn't know WHAT to order, it is a little overwhelming, that menu board! So I just ordered a mocha whatever, which come to find out, was a glorified hot chocolate. Perfect for that day! The next time was with my boss one morning, who happens to know about my anti Starbuck visits ... and I got a Vanilla Frappuccino. I had no idea it was basically a frozen desert type thing and was instantly sorry I ordered it as I knew that sugar crash was going to be ugly in the office ... live and learn! Caprese Salads

I think you should make a quick stop at the store today and surprise your spouse with this little treat this evening! Doh. I've seen the NAME numerous times, just had no idea what it WAS! Yeah, coming from a self-proclaimed, self-taught foodie, that was slightly embarrassing. So of course, the next time we were out at a more upscale Italian restaurant, we ordered it for the appetizer. Bleh.  What a disappointment. Seriously. Do NOT spend the money for this in the restaurant when you can make a much larger, better tasting version in your own kitchen with little effort. Seriously...tomato season is fast approaching (whee!!!) and you can always pick up the Sorrento sliced "fresh" mozzarella at your local grocery store to create this ... Tuscan Garlic Chicken

This is really a good recipe and I need to make sure I put it on the menu rotation soon as it's been a little while since we've made it ... It may look like a lot of work but you CAN do it it parts and generally, that IS what I do as I don't like standing in the kitchen for hours on end at the end of the day, you know? Here's what you need to make this really yummy dish ... 2 large chicken breast - slice them in half (which now I know, alternatively called butterflying!) 3/4 cup flour 1/2 tbs salt 1/2 tsp oregano 1/2 tsp basil 1 tsp black pepper olive oil (ummm, says 5 tbs total, but I don't think I used that much) 4 cloves garlic, minced (or use the lovely garlic press) 5 sweet mini peppers, finely diced 6 ounces fresh spinach 3/4 cup half and half 3/4 cup milk 2 tbs corn starch 1/2 cup chicken broth Ok, the ingredient list is a LITTLE out of order based on the way I wrote it while doing (the Kindle kept losing its wifi connection and the T...
