French Onion Soup

Repost Alert ... it's cooler (by our standards), life is really  busy right now and well, I think I need to make this soon! Gosh ... I look at the bottom of the recipe printout and see that I've had this since late 1998 .... wow! I've made this specific recipe a few times, but then I get distracted with a newer recipe and try that ... and ALWAYS have to listen to Hubby ask why I don't just stick with the first one I have... he's right. So, Saturday, it was a nice, sunny, BEAUTIFUL day, high of around 86. But the nights are getting a little cooler, and this morning it was 72 when I went outside at 8am ... hence, it's FALL TIME in Paradise, time to make soups! The sprinkler dudes were here making repairs, and since they were digging up in the back yard, I didn't really want to toss on the ole bikini and jump in the pool to float ... just not my idea of cheap thrills, you know? ;-) So, again, I made soup.  AND I used what we had on hand ... it...

Chopped Steaks with Mushroom Gravy

I've made this a few times in the past year, but nowhere near as often as I should since it taste so yummy ... And believe it or not, it qualified as Pantry Challenge friendly in that I have everything on hand to make it ... sweet! Here's how I do it: 2 1/2 lbs of ground beef (umm, 90/10 is what I used because it's what I had) 2 egg, beaten 2 shallot, chopped or 1/4 onion chopped smallish 2 clove garlic, chopped smallish 6 tbs parsley chopped 1 tsp ground mustard 3 tbs panko or bread crumbs 1/4 c plus a dash  flour 2 tbs oil 2 tbs butter salt  and pepper to taste Then you need this to make the gravy (this made tons of gravy which was good with the egg noodles): 4 tbs butter 3 8 oz package of shrooms, sliced (or 3 cans small cans (4 oz) shrooms) 3/4 onion, chopped small 1/2 tsp thyme 1/4 c flour 4 c (or 1 carton) beef broth salt and pepper Whew. Meatloaf ... From a Meatloaf Hater

Growing up, I HATED meatloaf ... my mom would make it probably once every few weeks, using, I'm sure that 70/30 ground beef ::shudder:: ... and serve it up with the boxed potato buds mashed potatoes. Ick. There was just something about the whole baked meat thing that made me want to gag every time. Then of course, you got Hubby, the big meat dude who LOVES meatloaf, and again, he would make it and I would just look at it, thinking to myself, it's just a solid piece of ground beef cooked to death. Ick. At least he made REAL mashed potatoes, lumps and all ;-) So with the sickness making its way through the household, Hubby and I were laying in bed Saturday morning discussing how we felt and what we wanted to make for dinner. He said "meatloaf". I said "ick".
