Beef & Bok Choy - Crock Pot Style

Ready for another crockpot recipe! Good! I made this a few months ago again and well, although it's still not Hubby's favorite, I liked it so I will share with you again ... OH! And if you use the coconut aminos instead of the soy sauce, you will be Whole30 compliant and Paleo as well ... just thought I'd share that with you! I modified it to what we had on hand ... of course! 2 1/4 lbs London Broil 1/2 cup beef broth 1 whole onion, cut in half and sliced 1 tsp chopped garlic ( are you prepping yours? ) 1/4 cup soy sauce (I used coconut aminos as I'm trying to do a little healthier and avoid soy!) 2 tbs of sesame oil 2 tbs minced ginger (from tube) 1 tbs minced red chili pepper (from tube) 5 cups or so of bok choy, chopped green onion, sliced, for garnish (optional) Sear beef in skillet just to brown both sides, move to crockpot. Creamy Potato Soup

We are seeing some cooler weather, by our standards, so I'm back to making soup again!  What? You don't call 75 at 6am cooler? You do NOT live in Steamy Paradise, do you?? We are counting down our days for our first REAL cold front to come through!   Now, THIS soup is yummy and I get really excited when I'm making it ... its just a little bowl of pure comfort food to me ... yummmy .... yeah, I'm also sooo over turkey at this point! The last few times I made this, I switched it up a little and used the refrigerated steakhouse seasoned diced potatoes .... I really liked the seasoned taters and plan to stick with that from here on out! Another thing I have to point out: toppings. I love toppings, but then again, I love a loaded baked potato ... so that's how you need to look at it. Do you like bacon, cheese, green onions on your baked potato? Then, by all means, add those to your cup of soup. Otherwise, eat it naked and make feel a little healthi...

Turkey Round Up!

Confession ... we aren't frying a turkey, or six, this year. Our friend is roasting a 21 pound bird and we will eat it at our house ... WHAT!? I remember last year our usual partners in crime spent the holiday back at their home states, Princess was in California visiting her fiance's (now her husband) father who has been there for a year receiving chemo treatments (who passed away that December), my dad had the flu and the boy and his girlfriend were vegetarian (still are) and doing something Veggie Like. And then I got the text message from my best friend in Bethany Beach that her mom was admitted to Hospice End Stage (which has just broken my heart for both her and her mom) ... which left me and Hubby ... WHO, by the way, was wearing a boot and waiting on x ray results on his foot ... this year, thankfully doesn't have all that drama ... a few things, but nothing like that! This year's only excitement will be the pregnant lady (Princess), only one partner in ...

Loaded Baked Cauliflower

Hey! I've been a little MIA this past week ... sorry about that!    I  did  have a few recipes that I wanted to share for the big feast coming up on Thursday but life has, once again, interfered with my good intentions. So, hopefully, you'll have everything on hand to give this a try ... if not on Thursday, maybe Saturday or Sunday when you start to get really tired of those leftovers ;-) As I'm sure you've noticed, I've really started to try MORE veggies and so far, so good ...so here's to this yummy dish that I picked up over at  Skinny Taste  ... with modifications, of course ...  This is how I made it on a fine Saturday afternoon ... you should too! 24 ounces of cauliflower florets ... I'm planning to make this over the weekend as I have everything on hand except the radishes which a quick, "frugal" stop at the store can be done on the way home from the office ... enjoy! I LOVE cookbooks, and have tons of them ... but with my new way of eating, I need some inspiration, here and there. I do NOT like to have them on my Kindle. I mean, yeah, it's sort of cool to just open up the Kindle BUT I don't like the layout/format whatever. Tuscan Garlic Chicken

Ready for an old favorite? One that I haven't made in a while and boy am I excited to make it coming up this week?? Tuscan Garlic Chicken. Even those who don't like chicken breast will like this. Ahem, I'm referring to my father in law who will be eating this and slurping, I promise. This is really a good recipe and I need to make sure I put it on the menu rotation soon as it's been a little while since we've made it ... It may look like a lot of work but you CAN do it it parts and generally, that IS what I do as I don't like standing in the kitchen for hours on end at the end of the day, you know? Grocery Shops in Review!

There were three stops this past week ... one in Indiana and then the other two back here in South Florida. It's nice to be back home, can I just tell you that?? I'm looking forward to prepping a few meals and having them ready to grab and heat for the week ahead! Here's what I picked up ... check back on Sunday for the Menu Plan and Meal Prep! Jewel-Osco – November 4 th , 2017 Total Spent - $104.65  I'm not going to detail this shop but will share a *few* things I picked up! Ghee $12.99 100 count Splenda $4.99 4 individual almond butter packets $1.00 each 2 cans scubby bubbles cleaner $1.99 each bag of pretzels $3.49 20 pumpkin shaped Reese's Peanut Butter Cups - these came to about 8 cents a piece ... I left the majority in Indiana in the freezer for our next visit! Then on Tuesday, I got on the airplane and I was HOME! Aldi – November 8 th , 2017 Total Spent - $50.xx *at this very moment I can’t find my receipt again ☹ Sad...

Ranch Pork Chops - Crock Pot Style

*This recipe has been made so many times in my household! You can use chicken or pork as both work really well!  When Hubby comes home on Tuesday, I plan to have this going in the crockpot to make his day ;-) The very first time I made this, Hubby opted to take me out that evening so we ended up reheated this and served with some mashed potatoes and whew ... it was very very tasty! Those items above? That's all you need in addition to the pork chops.  Seriously. One packet of ranch dressing One can of cream of chicken soup 1 tsp fresh garlic chopped black pepper You are  chopping your garlic  in mass quantities, right? I mean really. All you do is spray the crockpot with spray, toss in the chop. Mix up the balance of ingredients in small bowl and spread over the chops. Go ahead and toss in any chopped onions you see in the fridge ... Put a lid on the crockpot and make yet another mental note to find a new handle to replace the broken ...

Yum Yum Chicken Thighs

This is a repost but I'm adding it to my list of things to make in November so I'm sharing again! I'm also going to try and get some better pics!  I had this recipe  pinned  forever and finally gave it a try a few years ago. Yes, YEARS ago ... almost 4 years to be exact. I've been pinning and blogging that long!  Being that I'm pulling out some good chicken recipes for the month of February, I felt that I needed to put this out again and yes, I am making it too! Yum Yum Chicken Thighs! And I followed the recipe pretty darn close ... and realized, when I was about to bake it, it's a LOT like my  Sweet Mustard Chicken  recipe ... but that's ok ... any recipe that works out well is always a GOOD thing :-) So here's what I did ... 2-3 lbs chicken thighs, boneless/skinless thighs (I've been stocking up on these WHENEVER I see them marked down at Walmart and freeze them as soon as I get home) a little less than 1/2 cup of dijon mustard  ...
