Cobb Salad

Somedays, all I want to do is head out to  Sweet Tomatoes  and have an all you can eat salad buffet with unlimited soups and a few other starchy things on the side. I never opt for dessert because I'm usually a stuffed pig by the time everyone is ready to hit the yogurt bar.  No thank you. They do NOT serve Cobb Salads there but whenever I get around to making this, I'm always like, YUMMMM, we should do this more often! So again, after making this for dinner the other night, only because I didn't have anything thawed, AND Hubby had made 6 hard boiled eggs, I got to chopping. Took me a whole 15, maybe 20 minutes top ... even to make it pretty like so! It's really easy to make and I figure it's a bonus that I generally have everything on hand for the most part since I  try  to keep a healthy fridge! I even had a little bit of blue cheese crumbles left to put on Hubby's since that's what HE looks forward to when he orders it! Me? I just stuck ...

Thai Style Shrimp Salad

March Salads is trending hard in the house!  This is a FAVORITE of mine and I make it whenever the Boy is not around and Princess is ... not as often as I'd like since she is now a married woman and before long will be 2 1/2 hours WEST of me ... ::sob:: DID YOU REMEMBER TO SET YOUR CLOCKS AHEAD?? HEY! Don't forget to set your clocks ahead ONE HOUR!  We like to do it around 2 or 3 in the afternoon just to get in the groove of things! Are you all following the theme for March? Salads. It's all about Salads. Not just rabbit food stuff , but real yummy, stick to your ribs salads! So here you go. Hey, I know  it's still considered Winter but Spring is right around the corner and THEN It's summertime! Which means, BBQs, pool parties, friends, beers, more parties, boating, floating, oh, and more BBQs ... which means as either a hostess OR guest, you need to have a few, quick, toss together salads to provide for those hungry people coming to your house or that you are going to see ... Ahem. Really, all I'm saying is that  this  is that salad you want to have on standby for those upcoming events ... because you know that there will be at least ONE opportunity to make this and impress ;-) AND even better? Oriental Cabbage Salad

Do you have a few "signature dishes" that people look for when they come to a party? ME? Of course I do ... I actually have a few and it's kind of necessary to pick and choose on each occasion. This is one of those recipes.  All time favorite and each time we have a BBQ or Pool Party, it's on the menu. Simple, simple, SIMPLE easy to make ... and doesn't require any funky ingredients. SCORE! Most people like this, even if it's based on cabbage. Just an absolute delicious salad for those summer bbqs! Bag of coleslaw (or just plain cabbage, shredded, small to medium size head) 8 green onions, sliced thin 1/2 cup peanuts (or other nuts you like), toasted and cooled (used plain spanish peanuts) 1/2 cup sesame seeds, toasted and cooled (skipped as I didn't have any) 2 pkgs ramen noodles, crushed 1/2 red pepper, chopped Dressing: 4 tbs sugar. Simple Side Grillin' Dish

Every time I do this, I kick myself for forgetting how good it is. And then, every time someone ask how it's done, I kick myself for forgetting how EASY it is. Yeah. Really. Onions and Peppers. And squash/zucchini if you like! Grilled in the grill pan. On the gas grill (although, I'm certain the charcoal grill would be awesome too!) Cut your onion in half (root end to top) and then cut in thicker chunks. Toss in to a large bowl. Deconstruct your peppers : push the stem down and pull out, shake out the seeds and cut in half (bottom to top) and again, cut in to thick chunks. Toss these in with the onions. *Optional, if you like, you can add chunks of squash as well, which is what I've done here, but 90% of the time it's just onions and peppers in my household!* Grab some olive oil and add a bit to the bowl. DIY Blue Cheese Dressing

We love blue cheese dressing in this house ... nothing better than a bacon blue cheese burger ... oh yum! But of course, if you take a peek at that label on the back of that Kraft Salad Dressing label, you will find quite a few things that you have no clue what they are! As I'm getting older, I'm a little more concerned about what I'm putting into my body ... It's funny how people react to blue cheese! Some people love it, the bluer the better ... others, like me, prefer not to see so many blue veins running through ... and then you have "those" people who will up and leave the table if you even mention blue cheese ;-) If you are one of the latter, just hit next page to skip right over this recipe, I understand!
