Tuscan Garlic Chicken

Image
This is really a good recipe and I need to make sure I put it on the menu rotation soon as it's been a little while since we've made it ... It may look like a lot of work but you CAN do it it parts and generally, that IS what I do as I don't like standing in the kitchen for hours on end at the end of the day, you know? Here's what you need to make this really yummy dish ... 2 large chicken breast - slice them in half (which now I know, alternatively called butterflying!) 3/4 cup flour 1/2 tbs salt 1/2 tsp oregano 1/2 tsp basil 1 tsp black pepper olive oil (ummm, says 5 tbs total, but I don't think I used that much) 4 cloves garlic, minced (or use the lovely garlic press) 5 sweet mini peppers, finely diced 6 ounces fresh spinach 3/4 cup half and half 3/4 cup milk 2 tbs corn starch 1/2 cup chicken broth Ok, the ingredient list is a LITTLE out of order based on the way I wrote it while doing (the Kindle kept losing its wifi connection and the T...

Menu Plan Week 125 - Using What We Have

Image
Here we are again, another Funday Sunday has come and gone and now it's time to post the Menu Plan! Hope everyone is enjoying the Memorial Day weekend? We sort of laid low on Saturday, floated in the pool on Sunday and I have a single girlfriend coming over Monday afternoon to float ... not to mention, Hubby flies out Monday morning for a fun filled week in Germany. Is that said sarcastically? Sort of. He's a little anxious about the trip, the 11 hour flight from Atlanta is how he starts off and from there, he is just besides himself. He'll be fine ... he doesn't mind flying but I think he keeps focusing on the ELEVEN hours ... So ... it's just me, the cats and the kids (well, sort of hope the kids hang out at their respective boyfriend/girlfriend houses a few nights to give me some well deserved quiet time) ... I'm still not sure if I even want to entertain any of the girls during this time ... I could really use the quiet time and maybe get some de-clutter...

Smoothie Bags for the Freezer

Image
Summertime is here, and the heat is kicking in way earlier than usual ... we've already had a few 100 degree days that broke previous records from over 80 years ago! I'm also starting to get more in to the meal prep program and reducing my actual hands on time for stuff during the work week ... Which leads me to ... frozen yogurt to the rescue! No, not the kind that resembles ice cream, that is NOT what I'm talking about. What I AM talking about is frozen yogurt CUBES for smoothies and such. Uh huh. Makes life so much easier. And then, to make things even better, you just cut up your fruit and add them to little bags too ... And just like that, you have Smoothie Bags. Awesome! Feel free to use recycled ziploc bags. (don't worry, raw chicken NEVER saw this bag ... it was an overestimation of how many bags I needed for freezing) So...it's not a big deal to do ... but you do have to make an effort ... Take your yogurt (personally, I've started...
