Loaded Baked ... Cauliflower?

Yes, you read that right ...Loaded Baked Cauliflower ...  As I'm sure you've noticed, I've really started to try MORE veggies and so far, so good ...so here's to this yummy dish that I picked up over at Skinny Taste ... with modifications, of course ...  This is how I made it on a fine Saturday afternoon ... you should too! 24 ounces of cauliflower florets ... I love Costco for stuff like this (or 6 cups worth) 1/4 cup or so of bacon bits (again, great Costco buy!) 3 cloves of garlic, sliced 1/3 cup milk (I used 2%) 1 tbs butter 3/4 tsp salt black pepper to taste 2 tbs of finely sliced green onions (you do regrow the roots, right?) 1/4 cup shredded cheddar cheese Ready?? Grab your rice cooker and steamer insert. Add water to bottom of pot and fill up the steamer basket with the garlic and cauliflower. I really had to cram mine in to close the lid ...  Set to 17 minutes to steam. Go ahead, toss a load of laundry in the washer, hop on pinter...

Meal Plan #111 - Using What We Have

It's that time of week again ... time to Meal Prep and Meal Plan for the week ahead! It's going to be a fairly busy week at work, I think, being the end of the month and a short month at that ... and I have a few things I need to take care of to stay on the Frugal living line ... primarily, cancel the gym membership AND the extra classes that I'm paying for and NOT taking ... total waste of money and so not Frugal ... I've got tons of work out stuff at the house that I just need to get back in the groove with ... So ... last weeks plan was useful in some areas, but mostly not ... we did the potato soup because I mad that Monday when I was home ... and I used the ground beef to make tacos instead of chili ... and everything else, well, real life happened and the menu plan didn't. We went out to eat on Thursday (me, Hubby, the Boy and his girlfriend) ... the rest of the week was salad, tuna salad sandwiches and whatever else anyone could scrounge up. Honestly, I ...

Blood Orange Margaritas

I made these for the first time last March and was SO disappointed that I missed the blood orange wagon time frame! But not this year!! :-) I've been sipping a few of these here and there but quite honestly, it does NOT need to be peak blood orange season to enjoy them! I still have the sled wine charm on ... I've given up. Princess calls the Penguin everytime and the Boy calls the Elf ... so I get the sled, what can I say? There are tons of recipes out there for Blood Orange Margaritas and they are pretty much the same, EXCEPT they only make TWO drinks (WTF?) and they use TABLESPOONS for measuring. Umm ... if I have to make 2 to 3 batches, you really think I'm using a tablespoon accurately? Ummm, no. It's bad enough without alcohol ... so just imagine when you add a 1/4 cup or 3/4 cup of Tequila!! The first time I made this, blood oranges were out of season.
