Menu Plan - Week 42

Hubby comes home on Thursday, at long last. It doesn't feel like it's been two weeks, but it has. Unfortunately, I've not gotten any of my "projects" done ... barely cleaned house ... but I still have the next 3 days to make some accomplishments!  Number one project? Inventory and clean at least one of the three freezers. I need to know what's left to be consumed! I really want to stay out of the store this week ... with the exception of milk (the half gallon left expires the 19th ... Hubby likes milk) ... and I know that I still have lots of stuff in the freezers to eat up. So with that ... here's what I'm planning for the week .... Sunday - Island Shrimp with Avocado ... this was pretty tasty and wish I had leftovers Monday - Cobb Salad  (lunchmeat was pulled out of freezer Sunday) Tuesday - Chicken and Romaine Stir Fry (new recipe, here's the original ) (chicken in fridge defrosting) Wednesday - Wedge Salad (need to find a new reci...

It's Sunday ... I was a way for a few days, having a blast with Sonny Boy, his girlfriend and her mom ... and the college roomies ... oh...and Halloween Horror Nights! We had so much fun and the HHN was really cool with scary stuff everywhere! Then of course, we had to go Reflect a bit on campus at UCF ... *There should be a picture of the reflecting pond/pool/behemoth thing here BUT for some reason,  I can't upload it. You can see it HERE at the campus website, how's that?? But now, it's time to get back to real life and man, my list is long for a Sunday .... 1.  Help Mr. Bill (neighbor) get checked in for flight 2.  Stop at store and pick up a few things for dad 3.   go see dad 4.  menu plan 5.  cook and post new recipe ( Island Shrimp with Avocado ) 6.  clean kitchen cabinets (outside, they are looking funky...I think I see remnants of Fresh Fruit Margaritas ... how is that possible??) 7.  cle...

Another new recipe from another new cookbook, Primal Blueprint Quick & Easy Meals . I've decided that I really want to get back in to the cookbook mode ... I LOVE cookbooks, and have tons of them ... but with my new way of eating, I need some inspiration, here and there. By the way, in case you didn't know, 450 Swagbucks will  give you $5 in Amazon cash ... and that's how I've been buying the cookbooks ... Another side note ... I do NOT like to have them on my Kindle. I mean, yeah, it's sort of cool to just open up the Kindle BUT I don't like the layout/format whatever. It's not the same as looking at the 2 pages, side by side ... so I've decided no more cookbooks on the Kindle. So anyways ... I have everything, EVEN the mangoes for this recipe ... I had picked up a small container of pre-sliced mangoes last week at Whole Foods for the steak salad and still have some left ... Yeah, they were a little pricier, BUT a heck of a lot easier ...
