Paleo / Whole30 Ranch Dressing
I've been making this dressing for a few years now and it's been tweaked quite a bit so I thought, what the heck, let me take a video of how EASY it is to blend and then share the new and improved recipe!
I DO have a video of it but because I'm not savvy on how to edit the damn thing, Blogger tells me it's too large? WTF? *if anyone has a link to some easy video editing tips, by all mean, share them with me, puleeasseee??* You can catch it on Instagram or Youtube if you want to see it ... it's just cool how fast it comes together in my opinion!
So. As you can tell, it's Whole30 Approved, Paleo, Grain Free, Dairy Free, Gluten Free, yada yada yada.
It's also DELICIOUS! Which, seriously, that's all that really matters at the end of the day, right?
I use this on everything, not just salads. I use it to dip my chicken, burgers, pork, shrimp, EVERYTHING ... it is just plain awesome!
So, here's the new and improved way I've been making it lately:
1 egg, room temp. I just crack it in a tall canning jar and let it sit for an hour or so
1 tbs lemon juice, room temp as well
1 cup of avocado oil. This all started because I rant out of LIGHT olive oil ... I prefer the avocado oil way more now!
1/2 cup coconut milk (canned, shaken well before opening)
2 tbs red wine vinegar
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
2 tsp dried parsley flakes
1/2 tsp dried dill (not a dill fan but it's what makes it Ranch!)
Toss all this in the TALL jar and insert your immersion blender all the way to the bottom of the jar and start it up.
Let it sit on the bottom for a few seconds while it starts to pull the top ingredients down and then start moving it up and down slowly.
Blend til completely incorporated and creamy. Put a lid on the jar, label it and stash it in the fridge. I'd recommend stashing it a little further to the back because once the family sees "Ranch Dressing" they get a little greedy which makes me a little crabby.
Go ahead. Give it a try! I am quite certain that you will LOVE it as much as I do!
