Turkey Lettuce Wraps

*This is a repost from a while ago but since I'm making it this week, thought I would share with you!


I love when I try a new recipe and its spot on the first try with my modifications ... it does something for my self esteem :-D This one is definitely staying in the kitchen ...

Turkey Lettuce Wraps


Chicken Turkey Lettuce Wraps

20 oz package of ground, lean turkey. Um, do NOT buy the roll stuff, you know that's all dark turkey stuff, very little lean meat, right?
handful of green onions (cut right out of the glass on counter), diced
8 oz can of water chestnuts, drain and rinse well, diced
6 sweet mini peppers, diced
1/3 cup of soy sauce
3 tsp hoisin sauce (it's a miracle, I had it in the pantry!)
2 tbs dry ginger (I don't have fresh)
1 1/2 tbs water
3 tsp sesame oil

Brown the meat. Because mine was super lean (93/7), I added a little bit of olive oil to the bottom of pan since I wasn't using a nonstick pan. Chop it up as it cooks and drain if necessary when done. I didn't as it was pretty lean. Chop up even more now as you want it to be a fine ground. I've got this handy dandy tool nicknamed the North Dakota Food Processor (hey, my girlfriend gave it to me and she is from Dazey ND and calls it that) ... wishing now that I had used it to chop the other stuff!


While the meat is cooking, you can start chopping and dicing. I used sweet peppers because that's what I had on hand and hey, it's been 7 days since I've stepped foot in a grocery store!

All diced and ready to go

Add all to the pan


And stir it up


Make your dipping sauce:

1/4 cup soy sauce
2 tbs rice wine vinegar
2 tbs sugar
1 tsp sesame oil
1/2 tsp dry ginger
3 small cloves of garlic, minced (or easy way, use the garlic press)

Add all to small container and whisk well. Set aside. Isn't that just the cutest topper for a whisk?

Mr. Doughboy! (He has since died and is now replaced with just an ordinary small whisk)


Take your lovely lettuce leaves and lay them on a plate. Add some meat, enough to be hardy, but not too much to make the lettuce freak out (um, tried telling Hubby but you know how men are).

Drizzle a little sauce over the top (it's strong so don't free pour!)

Here's where I had a problem: I tried to roll up my lettuce but that wasn't working AT ALL.  Crap. Everything else was doing so very good and now THIS!

But then I found that if I just folded/scooped/held the lettuce in half, it was perfectly fine.

Ahhh. This was pretty damn good and even Hubby liked it ... definitely making again!

NOTES: I used butter lettuce that I got from Costco. It's good lettuce but I think a tad to fragile. I'm thinking NEXT time to wash the lettuce and toss in the fridge so it's crispier ... as it was,  I washed it and laid it out on the counter to dry. Almost wilty like ... but still good.

3 large heads from Costco were the price of ONE head at Publix!  
UPDATE: Better yet, stop at Aldi's and pick up a head for $1.29 most days
