Island Shrimp Salsa




I have 4 lbs (that I'm aware of) of cooked shrimp in the freezer ... from Whole Foods, so you know it's a little pricier ... and I need to use it up!

So. Thanks to Pinterest, I come across a few new bloggers and this recipe too! The original comes from Paleo Newbie and of course, a few modifications ...

I just love it when I have everything on hand, EVEN after a Pantry Challenge! Guess I should stay on the challenge a little longer, huh? :-)

1 pound of cooked shrimp, peeled and those pesky tails removed! I prefer to cut in half or 1/3 to make smaller bite size
1 cup of cucumbers, seeds scraped out if really watery and chopped
1 mango, chopped
1/2 cup of canned pineapple, drained, and chopped
half of a red pepper, diced
1/2 of a small rd onion, diced
1 smallish jalapeno, seeds and membranes removed, diced
1/4 cup of parsley leaves, chopped
1/3 cup olive oil
juice from 2 limes
2 tsp dijon mustard
1 tsp honey
1/2 tsp garlic powder
salt and pepper to taste

Ready to get this going?? Let's go!

Place shrimp, cucumbers, mango, pineapple, red pepper, onion, jalapeno and parsley in larger bowl.

In a separate smaller bowl, mix all the other ingredients, whisking to incorporate well.

Pour the liquid over the shrimp mixture, cover and place in the fridge for 30 minutes or so to allow everyone to do a meet and greet and get friendly with each other.

I was so dang excited for lunch the next day ... 

Serve cold and enjoy!!
