Week 153 Menu Plan Monday - Using What We Have

So ... have you missed the past couple of weeks of my Menu Planning? I have!

It's just been super busy at work and on the home front but so need to get back on track and do the right thing, both for ME and MY WALLET.  I get to make an online payment on Monday morning for $6000.00 for property taxes ... I just L O V E doing that! So here we are, yet again!

I'm hoping everyone had a wonderful Thanksgiving. Ours was the same as it always is when we are home, we had friends over, fried 3 turkeys, ate too much and consumed too much tequila, wine and champagne. But I woke up Friday morning and walked to the library to return some books (score for me as no late fee and I got a little exercise in) then continued on to the bank to make a deposit (for property taxes that are due on Monday) and then back home. That little jaunt sort of helped my slight tummy distress but more than anything, I wanted to enjoy the weather!

With that said, let me tell you ... since doing my first Whole30 (but not for the WHOLE 30 days!) and the reduction in drinking and eating crap food, I've found that my stomach is pretty damn sensitive now. Yikes. As in, state of misery for a few days, bloated and just crummy feeling. Not fun at all. So I'm thinking, yeah, there is something about certain foods that makes me feel like crap and I really want/need to be aware of what's going in and coming out! Sorry if that's too much information, but lets be honest, shall we??

The menu this week is NOT Whole30 or Paleo geared for the majority of those in the house ... but for those days where we are heavy on processed stuff (uhm, Sunday night, for example) I just have a large salad with some protein and use Tessemae dressing ... keeps me out of trouble for the most part!

With that said, here's what I'm looking at this week ahead!

Sunday - Grilled Cheese Sandwiches and Tomato Soup (from the can with milk) ... long day hanging up lights outside! The grilled cheese weren't as fancy as the original recipe, but did use provolone and cheddar because I wanted to use what we had on hand!  I had the above mentioned salad with turkey and Tessemaes  lemon garlic dressing ;-)


Monday - Turkey Club Lettuce Wraps - leftover turkey, cooked bacon, marinated tomatoes and mayo ... yummm ... will also be freezing the leftover turkey at this point in serving size portions ... not sure if I will have time to make homemade mayo or not ...

Tuesday - Taco Tuesday (surprise!). I think everyone will be happy that the turkey has taken a break at this point ... will make up a bag of riced cauliflower to make taco bowls for Hubby and I too! (recipe coming Tuesday!)



Wednesday - Ranch-y Pork Chops in the Crockpot with mashed taters (in fridge) ... 



Thursday - Turkey and Broccoli Stir Fry with cauliflower rice (using Thanksgiving Turkey)

Friday - Burgers on the grill ... it's Friday!

Saturday - It's the Boy's 23rd birthday and I would like to see if we can get everyone together to go out for dinner this evening ...

Because I am trying to be way more mindful of what I eat there will be some nights where I will just improvise with a big salad and protein ... if I could get EVERYONE on board with me, life would be so much easier but then what would I do with all the food that I have on hand NOW?? :-)

Grocery Cart Sundays

I don't know why, but I love to read what other bloggers are buying at the grocery store.

Yeah. I guess you could say I'm obsessed with food ... but I 'think' I have a healthy relationship with it ;-)

So, with that said, I thought, what the heck, I'll try to share my weekly grocery trips ... and if everything is going according to plan, you would even get a picture or two ... but of course, things don't always go as planned ... and again, this was one of those weeks with NO pictures :-(

A bonus for me to share weekly is to keep my grocery budget in check (hopefully!)

I hope everyone had a GREAT Thanksgiving and you are making your way through all the leftovers in a timely manner? Me? I'm not a big turkey fan and the leftovers can drag on for too long in my opinion. Usually I make Hot Browns but this year I wanted to keep it lighter and more healthier (and Whole30 compliant) so I stuck with salad stuff ... 

BUT ... that's not why you are here today, is it??  Nope. You are here to see how the ole grocery cart looked this past week, uh huh? 

Alright, alright. I'll share ... but first, I want to share that I am considering changing up my budgets all around. Of course, food is the number one thing that you can change the quickest and see fast results ... but I am setting myself up for another new year and I have some pretty lofty goals for 2016!  I'm looking forward to getting everything finalized and on paper because once it's in writing, it's so much easier to review and stay on track ... but as it stands right now, I think $100 per person per month is what I'm going to aim for. That's $300.00 currently. Not sure how I will handle the friends and families that come to eat often ... but I think I could do this for a little while, even under a Whole30 plan ... but I still need to tweak this a little more before I share all the details ;-)

Ok, here's how the grocery carts looked:

Grand total $142.16 ... 

Did anyone notice that I did NOT buy a turkey (or two, or three) this year? We handled everything EXCEPT the turkeys this year which was sort of nice ... oh, any my one friend made the mashed potatoes ... but otherwise, we cooked all the sides ;-)

A lot of money was spent this week but quite a bit of those ingredients will be carrying over in to the new month AND the Splenda? Not sure what I was thinking when I picked it up but I think I'm returning it since no one will use it and heck, it was expensive!

Turkey & Cabbage Salad with Almond Butter Dressing

Hey hey ... it's been a little while since I've shared a recipe, let alone a NEW recipe ... so what better time than when I'm sure everyone is dealing with excessive amounts of turkey!

As always, we have WAY too much Thanksgiving turkey left over and I'm trying to think of other ways to use it up ... because, honestly? I'm not a huge turkey fan ... even when it's fried like we do ... so I have to get a little more creative as to what to do with it!


This fit the bill perfectly and even better was that I had EVERYTHING on hand to make lunch on Saturday! Score!!

Yes, I will be making this again for lunch this week and heck, I might even grab one of the mini bags of turkey out of the freezer to do so!

Here's what you need:

Chopped or shredded cabbage with carrots, etc ... in other words, a bag of coleslaw will work perfect!
cooked chicken, chopped, or in my case, cooked turkey
cucumbers, chopped (leftover from veggie tray on Thursday)
red or any color peppers, chopped (leftover from veggie tray on Thursday)

Ahem ... this was picked up at Costco a few weeks back and I've been eyeing it 
for the past week to make sure it was still edible. Thankfully, it was! 
I tossed the packets of dressing as I didn't need them

Now, time to make the dressing which really is the star of the salad!

1/3 cup almond butter (make sure you stir it well otherwise it will be real stiff)
garlic clove, minced
1/2 tsp ground ginger
1/2 tsp red pepper flakes
2 tbs white wine vinegar
juice of one lime
2 tbs coconut aminos
4 tbs avocado oil (or olive oil), enough to make the dressing a little pourable
salt and pepper to taste

Just so you know, coconut aminos are pretty similar to soy sauce ... and since I'm sort of/kind of back on Paleo/Whole30, this was fitting the Whole30 bill to a T.

Dump all the dressing ingredients in a bowl and whisk to combine.

Toss your cabbage mixture into a bowl (serving size or larger to share), top with cucumbers, peppers and chopped turkey. Pour the dressing over all and toss to combine. Honestly? I used my bare hands as my dressing was still a little to thick ... I ended up adding more oil to the dressing to make it thinner.

This was really really good and I'm pretty excited to make it again for lunch Monday!

Grocery Cart Sundays

I don't know why, but I love to read what other bloggers are buying at the grocery store.

Yeah. I guess you could say I'm obsessed with food ... but I 'think' I have a healthy relationship with it ;-)

So, with that said, I thought, what the heck, I'll try to share my weekly grocery trips ... and if everything is going according to plan, you would even get a picture or two ... but of course, things don't always go as planned ... and again, this was one of those weeks with NO pictures :-(

A bonus for me to share weekly is to keep my grocery budget in check (hopefully!)

So ... has anyone out there been missing my Weekly Menu Plan? I am still planning, just haven't been sharing as it's pretty darn busy around here lately.  You know, work, home, family, life ... sometimes those things have to take a priority over blogging. PLUS I haven't had time :(  BUT I'm working on fixing that problem! Honestly!

This past week was fairly decent as far as the budget goes ... helps that I remember that property taxes are coming up on the 30th (a nice chunk of change will be put out) and then Hubby's birthday was Saturday which I took the easy way out and booked a reservation for four at Texas de Brazil ... not the "best" place to go but close to home, cheap Uber ride and everyone could get what they wanted. PLUS we know a waiter there so we might have gotten a little bit more attention than others.  

Can I tell you something? Thanksgiving is in, like, FOUR days and I don't have a turkey, potatoes or anything except a few random things that don't quite make the meal. Oops.  We buddy up with another couple and rotate who's house is the host and this year we said we would as we have the kids and their *new* significant other (Princess), plus Hubby is going to invite a young (very pregnant) couple over along with another younger kid who is new in town with no family locally ... it will be fun. BUT I think I need to get some shopping out of the way ... and again, probably NO menu plan to be posted as I need to get the refrigerators cleared out!!

One shop this week. ONE. That's it! And really, it was for CAT FOOD only. But of course,I started wandering the aisles, it was 7:30pm, I hadn't eaten since 8:30 that morning and I was starving ... you know how this story ends, right?

Publix, I have a love/hate relationship with you lately:

2 plus pounds of fried chicken tenders from the deli $17.87. This was dinner
2 8 oz pkgs of shredded mozzarella cheese $5 less 55 cents
2 8 oz pkgs of shredded cheddar cheese $5 less 55 cents
10 (yes TEN) 8 oz pkgs of KerryGold stick butter $2 each ($20 total) ... I freeze these and it will last me til next Fall IF I don't start making Ghee myself ;-)
Bag of cat food $13.59

Grand total $62.25 ... even though the receipt said I saved $23.76 ... whatever. 

I've got a grocery list running for the week ahead: bread, dinner rolls, potatoes, turkeys (yes more than one, we fry), salad stuff, eggs (for deviled eggs), celery, carrots, broccoli, cauliflower (for the veggie platter), something sweet (maybe?) OJ (for the mimosas), and so on. I bet, around $200 worth of stuff at the end of the day. AND I was thinking of doing Costco but then said NO ... we head to Indiana in 2 1/2 weeks for a quick 5 day trip so I need to keep the food situation under control ;-)

So.

I apparently have forgotten that I have a budget. Well, maybe THAT'S the problem is that I don't have a real bona fide budget. I mean, seriously. I say xx a month but then when I go over that amount, I continue to shop ... sometimes with a little more restraint, other times not. I'm thinking that I really need to rework that process as the way I'm currently handling the so-called budget is just NOT working.

Oh, yeah. I also, sort of, forgot to post a menu plan this past week ... what is going on in my universe??

Ahem.

This past week involved TWO stores ... Trader Joe's and Costco. Yup.




Trader Joe's was a little surprise as to how fast it added up.  I attribute that to the giddiness I had when I finally saw the bags of Riced Cauliflower! Yes, $1.99 for a 12 oz bag and I bought 8 bags (honestly, I thought it was 6 but whatever) ... and I felt compelled to pick up a few other things, and before you know it, I had a bill ... 

Trader Joes:

4 boxes of Joe's Diner Mac & Cheese (for Hubby and Boy) $2.99 each
2 bags of toasted coconut chips $1.99 each (o m g these are delicious but do have added sugar)
8 bags of Riced Cauliflower $1.99 each
2 pkgs of Chicken Red Curry Medallions $5.99 each (honestly, really should not have bought these as I probably will not like)
2 12 oz pkgs of shredded cheddar cheese $3.49 each 
2 boxes of turkey gravy $1.49 each
2 bags of organic unsweetened coconut shreds $1.99 each
2 pkgs of fried onion pieces $2.99 each

Grand total (surprise!) $63.76

Then ... had to attend a Care Plan Meeting for my dad on Thursday afternoon and since I was there, figured I'd hit up Costco for a "few" things ... no list in hand, mind you:

2 bottles of cheaper champagne $11.99 each less $2 each
2 dozen organic eggs $6.99
3 bags of GF Harvest Mix snacky stuff $7.69 each
Twin pk (32 oz I believe?) of rotisserie chicken lunch meat $8.79
pkg of crimini mushrooms $3.99
bag of Asian Chopped Salad (cabbage) mix $4.99
3 pk of butter lettuce $4.49
box of assorted crackers $8.99 less $2.50

3 pk hothouse cucumbers $3.99

Grand Total $111.27

Total for week: $175.03. Total for month to date with TWO WEEKS left: $526.03. Ahem.  Some of the items were purchased for Thanksgiving and potential Boat Parade Party (although that may not be happening if we end up going north for a few days) but still ... I haven't picked up a turkey, taters, or anything else yet!

There was a lot of money spent on groceries this past week and not a whole LOT of food that came in ... I think I need to just avoid the stores for the next week or so!

Costco found its way on my circuit this past week ... we can blame the Boy for that ... he had a few things he wanted to get, as I did, and we went one night after work ... spent more than I wanted, $235 ... and granted, the Boy did give me cash, it still hit the so-called budget a little harder than I wanted.

Then I did a quick stop at Whole Foods one night to pick up some salad stuff and apples. And Tessemae's salad dressing. And before you know it, that bill was $28.

AND ... this morning, on my way back from visiting my dad, Hubby's texting me that we need milk. Fine, let me swing in to Whole Foods since it was the easiest store to pull in, park, shop, check out, and leave ... $88 later. Obviously, way more than just milk was purchased:

salad mix $2.50
honeycrisp apples $9.34 (uhm, yes, as long as they are tasting THIS good, I will spend $3.99 a pound)
1 lb black forest ham $11.10
2 pkgs of chicken wings $6.68 and $6.75
3 pks of sugar free bacon $7.99 each (oops. Should not have bought)
Tessemaes Lemon Garlic dressing $4.99 (I'm addicted, need to find a copycat that works)

While visiting my dad, my nose was runny. Then at Whole Foods, I started with a cough. By the time I started the car to leave the parking lot, eyes were watery ... and I have a cold. Really. Just like that!

There you have it ... $345 for the week (I just counted on my fingers TWICE to make sure that was true!) and it's only the FIRST week of the new month and we still have the holiday and a birthday to deal with! 

I think I will go make some Benihana Onion Soup that uses NONE of the ingredients purchased this week ;-)

Costco Time!

So the Boy wanted to make a run to Costco ... and of course, I had a few things that I wanted to pick up too ... so I said, sure ...

And off we went.

I did have a list and stayed pretty much on track.  A few things were not found and very few things were added to the cart that were not on the list.

But it still added up. To the point where I think I might need to do a mini no-spend challenge ...


Here's what we got:

Shrimp & Avocado Salad

I really love it when I come across a recipe that I have ALL the ingredients on hand to make, except one!  I mean, it's like mandatory that you make it!

This original recipe comes from Skinny Taste (which, by the way, I got her cookbook for Christmas and I'm sad to say I've not cooked ONE recipe from it yet!) and of course, I made a 'few' modifications but the whole idea comes from there!


And yes, it's Whole30 compliant (of course, I made this at the start of Week 2 and was still in the excitable mode!)  It will stay around for a repeat, trust me!

Here's how I did it:

1 lime, juiced (Costco)
1/4 red onion, finely choppped (Aldis)
1/2 tsp avocado oil (or olive oil) (Costco)
dash of salt (Costco) dash
black pepper to taste (Costco)
1/2 pound of cooked, peeled shrimp, cut in bite size pieces (8 ounces or thereabouts) (Whole Foods a while ago)
4 sangria tomatoes, chopped (Costco, these are like little tomatoes)
1 avocado, diced (Costco)
1/2 tbs cilantro, chopped (Publix)

The shrimp was frozen but not to worry, a quick rinse under running cold water 
defrosted these bad boys quickly!

In a small, non-reactive bowl, combine the lime juice, oil, red onions, salt and pepper and let that sit for at least 10 minutes to mellow out the onions (cool tip, dontcha think?)

My lime was pretty juicy so I had a lot of juice but all is well!

In a LARGE bowl, combine the shrimp, avocado and tomatoes. Add the smaller bowl of the onion mixture and combine. Gently stir in the cilantro.

That looks like a LOT of avocado, but again, all is well!

Serve up and enjoy!

Menu Plan Monday Week 149 - Whole30 Style Using What We Have

Hi Hi ... it's that time of the week again, my not so favorite time but then again, it isn't all that bad ;-)

Menu Planning and Meal Prepping on Funday Sunday!

So after the past 2 weekends of drinking beer and feeling like crap the next day AND because I've not been dealing with some really big stress very well ... I'm back on track for Whole30 ...

Third times a charm, right?

Hubby is traveling Monday, Tuesday, Wednesday and comes home Thursday night so those first 3 days will be easy (well, really, I started Sunday which was easy enough) and I'll just have to remind him that the LaCroix is my drink of choice and the protein and veggies is my food of choice too ... I just need to stay focused and remember how good I was feeling before I headed off to Halloween Horror Nights ...

There was a little food prep on Sunday afternoon: cooked up some chicken breast, made 4 pounds of green beans, prepped some salad stuff and cleaned out the fridge ;-)

I spent a LOT of money this past weekend on groceries. Friday night was all about Halloween, friends and fun.  Sunday was supposed to have been a $10 stop, but then I came across tons of marked down meat and of course, I couldn't pass up some of the stuff!  I did leave a lot behind for others, don't worry :-)

Ok, here's what we got planned for the week:

Sunday - burgers on the grill with sauteed green beans ... I wrapped mine butter lettuce leaves and it was pretty tasty ... as were the green beans!  The burgers were in the freezer and preformed and I really need the space ;-)


Monday - Chicken Lettuce Cups ... will have to modify the heck out of my original recipe but I know it will taste yummy! Will use the ground chicken that I picked up on Sunday.Got home way too late (7:30pm) and just heated up a leftover burger from Sunday night and ate a repeat ... burger wrapped in lettuce and more green beans. I also had a clementine and raspberries on the side.

*wonder if I could make this and freeze it? If nothing else I will at least need to cook the chicken*

Tuesday - Taco Tuesday ... the usual drill! Ground beef in the freezer


Wednesday - 4 Way Chili (chili from the freezer) with zucchini noodles

No cheese will be added this week, but will top with some diced avocado instead!

Thursday - beef brisket in the crockpot ... Hubby will NOT be happy that I made this since it's usually the dish he makes but oh well!

Friday - Shallot Chicken ... which, really, is Onion Chicken since I use onions instead of shallots ;-) ... new recipe that I made last week and Hubby loved it but asked me about 50 times that's all I really did to make it since it stupid easy! Recipe coming up this week

Saturday - I am going to let Hubby choose and will certainly guide him if necessary ;-)

It's funny as I'm posting this on Monday night but found myself the past 2 mornings wanting to get a head start on cooking for dinner since it was so bright out early in the morning. Of course, when I left the office at 7pm Monday, it was pitch black which I don't like!!

A bonus for me to share weekly is to keep my grocery budget in check (hopefully!)

So. I did a stop at Publix Friday after work and spent $88.03 and THEN at the last minute later that evening, the Boy and I hit up Winn Dixie ... and spent $63.49. Oh. Then Sunday we had the now ex-boyfriend over for breakfast and I promised turkey bacon ... didn't have any stashed in the freezer so had to make ANOTHER run to Winn Dixie and hit the motherload of marked down meat ... $89.51 BUT there was like $40 in coupons on the meat ... Nothing like ending the month on a high note, and going in to a new month on the same note!

Here's what I bought ... check back later for the Menu Plan to see how I plan to use some of the this food ... 

Publix was bad in that I bought stuff that was NOT on my list and then forgot a few things as well ... crumb

2 bottles of Dole pineapple juice $2.00 each and an additional $1 off each bottle
4 bottles of Bolthouse Farms Protein drinks (Hubby and Boy) B1G1F so $2.99 for 2 bottles
2 containers sour cream B1G1F $2.49 for both
gallon of 2% milk $3.45

Used a $5 coupon and that brought the total to $88.03. Oops.  Too much beer and NOT a fan of the Oculto (my taste buds must have changed while on the Whole30 for those few weeks!)

Then ... the Boy and I decided to run down the street to watch the Halloween contest but figured we needed to eat first ... so off we went to Winn Dixie!

2 smallish beef briskets $18.40 and $14.12 each plus the $5 or $8 off coupons (crockpot plans)
beef loin $10.62 plus the $4 off coupon
boneless ribeyes $9.78plus the coupon (can't remember)
ground pork $4.97 and $2 off (making sausage this week, hopefully)
ground pork $5.34 and $2 off
2 pkgs of thin cut boneless chicken breast $7.19 plus $3 off and $6.16 plus $3 off (cooked one already for lunch protein)
2 pkgs of chicken burgers $4.99 each less $2 each
4 pks of ground chicken $3.99 each less $1.50 each (i see lettuce wraps coming!)
2 turkey bacons $2.99 each
dozen eggs $4.49 (good grief)

2 bottles of almond milk (the better stuff) $3 each (I was so excited, this has been running $5.99 each)

Grand total $89.51 ... starting off the month on a good foot ... IF you remember I just got a bunch of protein ... I am thankful for a new month and guess what ... I'm going to try doing Whole30 again ... felt like crap the past few weekends from b e e r ... I know that's bad for me ;-)
