Frugal Activities #19

I really like doing this post as it keeps me accountable and makes me think twice about some things ...

It's been a few weeks since I've done this update ... between being sick and just not having ANY motivation, not much more to say ;-)

We have been somewhat frugal lately ... in some areas ... other areas, not so much ... so here we go, our Frugal Activities for the past few weeks:

1.  Utilizing the health insurance and getting to the doctor with our co-pay of $30 (that does NOT seem inexpensive at all!) ... Hubby was given a z-pac, steroids and something else ... I'm still dealing with this cough and some chest congestion ... I'm going to have to go back to the doctor as I don't think I'm in the clear just yet.  Antibiotics and steroids cost $10 each.

2.  Staying out of the grocery stores for the most part. Did make a stop at Costco the other night on way to see dad for a few things he needed and I picked up some stuff too. Used my rebate check of $107 to apply towards the bill.

3.  Paying bills on line and saving the cost of stamp (forty nine cents??)

4.  Playing Pandora while cleaning the house. We are *this* close to having a house cleaner come every 2 weeks with each of us pitching in 1/4 of the cost (kids, me and hubby)

5.  Using what we have for meals ... with the exception of Friday when we met for lunch ($30)

6.  Making the extra attempt to eat healthier with fresh fruit and veggies. I've lost 7 pounds in the past 3 weeks since I got sick.  I intend to keep those 7 pounds OFF!

7.  Started another Goodwill bag and decluttering a little here and there. I realize that clutter (and excess items) make me discontent with what I DO have when I can't locate what I'm looking for (um, 4 black tshirts and I really only like ONE of them enough to wear??)

8.  Again, rooting around in the freezers to find some yummy goodness to serve up for a last minute dinner on Saturday night with friends. Yes, we did pull it off (I'm always amazed that we do this) with chicken (breast) onions, mushrooms, side of crashed taters and a corn & bean salad ... Hubby also did his caprese salad as one of our friends brought over fresh mozzarella ... yummm ... 



And of course, full disclosure on the NOT so Frugal Activities:

1.  Costco. Not that it was out of hand but still.

2.  Lunch out on Friday afternoon with Hubby .. granted, it was $30 which honestly, that's a lot for "diner" that we went to.  The place we wanted to go to was apparently seized by the state for non-payment of taxes. Good grief!

Actually, we haven't been doing too badly and I am seriously considering possibly doing a pantry/freezer challenge for July ... as soon as I type that, the sales start coming out with great stock up prices ;-) You know how that goes!

100 Days of Happiness - Day 16

Let's be honest, sometimes you have to make an effort to be happy. Yeah, I get it, the car wouldn't start, the sink clogged up, the air conditioning bit the dust, you got behind the biggest jerk on the interstate ... and all those things just make for a pretty shitty day and attitude.

I get it. Believe me, I really do.

BUT ... everyday, there is SOMETHING out there that makes you happy. Sometimes, you don't even realize it as everything else just takes over. Real Life is difficult, I know.

So. I propose to do 100 Days of Happiness.  Basically, just post something (most likely just a picture with a little caption as I don't think I can dedicate the time to do a whole post daily!) and most likely, that picture taken with the cell phone ... 

Some things will be materialistic (sorry), other things will be nature, animals, doings, people, etc. It just depends on what pops up in my day to day happenings :-)  I am honestly hoping that I have more than ONE thing to choose from each day since I will be making more of an attempt to find happiness ...

Day 16

It's been a while since I made these yummy apple treats ... everyone devoured them within minutes (4 apples!) It's nice to make something healthy to snack on and they are scooped right up!

100 Days of Happiness - Day 15

Let's be honest, sometimes you have to make an effort to be happy. Yeah, I get it, the car wouldn't start, the sink clogged up, the air conditioning bit the dust, you got behind the biggest jerk on the interstate ... and all those things just make for a pretty shitty day and attitude.
I get it. Believe me, I really do.
BUT ... everyday, there is SOMETHING out there that makes you happy. Sometimes, you don't even realize it as everything else just takes over. Real Life is difficult, I know.
So. I propose to do 100 Days of Happiness.  Basically, just post something (most likely just a picture with a little caption as I don't think I can dedicate the time to do a whole post daily!) and most likely, that picture taken with the cell phone ... 
Some things will be materialistic (sorry), other things will be nature, animals, doings, people, etc. It just depends on what pops up in my day to day happenings :-)  I am honestly hoping that I have more than ONE thing to choose from each day since I will be making more of an attempt to find happiness ...

Day 14

This has been my substitute for half and half in my morning coffee (yes, I'm back to some coffee in the mornings) ... once you get over the fact that the coffee is still black, it's pretty tasty

Week 78 Menu Plan - Using What We Have

Whew ... what a week it was last week, and then some. I was pretty sick and then the Princess and Hubby started up with it ... uggg.

Didn't even plan anything last week, everyone fended for themselves, I pretty much skipped out on dinner each night. Not good but when you feel as bad as I did, it's the way it is.

This week, however, I'm focused and planning on getting back on track ... need to take care of those who are sick and relying on ME to take care of them. A mom's job just never ends.

I stayed out of the grocery store for over a week ... and no one starved to death. I did cave in and stopped at Whole Foods Saturday afternoon (just for a few things) and came home with a bunch of produce, milk and such for $106. Yikes!  I am going to try and stay out of the store this week and avoid Costco too, even though it's calling me ... I can do it!

Here's what I'm shooting for this week:

Saturday - meatloaf and mashed potatoes with gravy. Yes, I added Saturday in this week, just because I'm up to cooking again and feel the need to share!  ;-) I will need to share the recipe as we all enjoyed this (me, who is a big anti meatloaf kind of girl)



Sunday - Pizza - dough is in the freezer (publix had them buy one get one free a few weeks ago), cheese in fridge, toppings in fridge/pantry ... thinking of margharita pizzas

Monday - leftovers OR just a simple salad for all ... I've got a big container of baby spring mix, would toss a few of the Simply Smart Chicken pieces in the oven for some quick protein and toss all with craisins (pantry) and sliced almonds (pantry) and some honey mustard dressing (from the weekend)



Tuesday - Chicken Marsala - chicken in freezer, shrooms in freezer, marsala wine in wine rack. Will serve with some rice on the side



Wednesday - Damn Fine Chicken (crock pot!) with leftover mashed potatoes



Thursday - I would like to think leftovers, if not, soup and grilled cheese sandwiches (um, canned tomato soup and these killer sandwiches). Soup in pantry, bread, may have to buy, cheese and wine in fridge.



Friday - I'm not sure about this evening ... it's going to be a pretty busy day at the office, we have friends coming in town, we've been invited to a local bar to watch a local country band perform (and our friends coming in town are NOT huge country music fans) and as of now, no one feels like doing anything (hoping the sickness clears out by then!) ... if we opt to stay in and eat here, I'm pulling some brats from the freezer to use up some of the crap craft beer in the fridge ... will need to buy buns. I like to top my brats with fresh diced tomatoes (a little fresh tomato stuff!) and shredded romaine lettuce ... sounds odd but it's really good! 

Saturday - Hubby's choice ... I'm rooting for anything besides chicken ;-)

Meatloaf ... From a Meatloaf Hater

Growing up, I HATED meatloaf ... my mom would make it probably once every few weeks, using, I'm sure that 70/30 ground beef ::shudder:: ... and serve it up with the boxed potato buds mashed potatoes. Ick. There was just something about the whole baked meat thing that made me want to gag every time.

Then of course, you got Hubby, the big meat dude who LOVES meatloaf, and again, he would make it and I would just look at it, thinking to myself, it's just a solid piece of ground beef cooked to death. Ick.

At least he made REAL mashed potatoes, lumps and all ;-)

So with the sickness making its way through the household, Hubby and I were laying in bed Saturday morning discussing how we felt and what we wanted to make for dinner. He said "meatloaf". I said "ick". But then I said, fine, I'm sure I have every thing on hand to make it and if it makes him feel better, so be it, I will make meatloaf ::shudder::




Thankfully, Pinterest is still the love of my life.

The original recipe is here ... we didn't modify it too much, but a little (of course!). So here's how we did it:

1 lb of 90/10 ground beef
1 lb of 80/20 ground beef (honestly, because that was the 2 packages I pulled out of the freezer!)
1 cup of oyster crackers, crushed (because that's what I had in the pantry)
1 cup milk
1/2 package of dried onion soup mix
2 eggs
3/4 cup diced onions (finely diced)
1 tsp salt
generous amount of black pepper
few dashes or Worcestershire sauce
AND
1 cup ketchup
1/2 cup brown sugar (consider using 1/4 cup if you don't want a sweet sauce)
2 tsps Worcestershire sauce

Mix the crackers, milk, eggs, onions, soup mix, salt, pepper and Worcestershire sauce in large bowl. Add the ground beef and mix well.

Grab a large sheet of wax paper and form a loaf about 8 inches by 4 inches wide.

Line a large glass baking dish with foil and transfer the loaf to dish. Thinking back, we had used parchment paper and I could have just laid THAT in the dish! Doh.

Mix up the ketchup, brown sugar and Worcestershire sauce in small bowl (make sure you remove the sugar lumps BEFORE you add the liquid ingredients ;-) ).  Brush about half the mixture over the top of the loaf.

Bake in oven, uncovered, for about 70 minutes at 350 degrees. After 70 minutes, test for doneness (no pink remains) and then, if you have the option to convection roast, turn that on for about 10 minutes. Otherwise, you can do a low broil to brown the top a little.

Remove from oven, let sit for 10 minutes or so. Using a spatula, cut into slices and brush the rest of the sauce over the top. (this is totally optional. I think the sauce was a tad too sweet and probably would skip this last step next time)




Serve up with a side of REAL mashed potatoes and green veggie of choice. Sit back and think, hey, I could become a meatloaf convert!



*Note: I suppose I should tell the truth and say as a kid, I was super picky and turned my nose up at just about everything ... but meatloaf has been one of those things that I would NOT willingly eat or make ... maybe now, yes!

Day 12

feeling better so why not a peach vodka, red grapefruit and splash of cranberry martini drink (ahem, it was only 4pm but regardless, it will be a very early night tonight!)

Frugal Activities #18

I really like posting this somewhat weekly as it keeps me accountable and does make me think twice about some things!

I've been sick. Like REALLY sick ... didn't menu plan ... didn't do anything for Hubby on Father's Day ... lucky that I was able to get to work and at least push papers around every day ... it's been a long time since I've been that sick. Needless to say, being sick can make you very frugal, but it can also bring out bad habits ...

Here's a few of the Frugal Activities that we did around here this past week:

1.  Stayed out of the grocery stores ALL WEEK long. It's been one week since I've stepped in a grocery store. I'm not dying yet either. Miracles!

2.  Made more foaming soap for the kitchen. I wasn't up to doing dishes so just threw a batch together and told the kids to either use the dishwasher or use the soap but DO NOT LOAD UP THE SINK with dirty dishes.

3.  Opted to do a walk in clinic at CVS instead of the doctors ... with my co-pay it cost $30. Unfortunately, the CVS clinic would not prescribe anything as I had very limited respiration in my lungs and she strongly suggested I get a chest xray to make sure all was really ok. I didn't have the energy to be worried (never had a chest xray, couldn't think clearly to wonder WHY I needed it, just took her advice) and went to an urgent care clinic for chest xray, diagnosis of bronchitis, breathing treatment and 3 scripts ... all for $100. No, not cheap BUT a heck of a lot cheaper than a trip to ER for a chest xray which my doctor probably would have recommended.

4.  My boss bought me lunch on Wednesday (a cup of french onion soup) as he felt bad for me plugging away every day in the office.

5.  Made a soup with ingredients from the freezers and pantry on Friday at the last minute since I was feeling better and didn't have anything planned. Saved a trip to the store and/or drive thru!



And of course, some of my NOT so Frugal Activities ...

1. Skipped out on Menu Planning ... didn't matter as I didn't eat dinner Saturday, Sunday, Monday, Tuesday or Wednesday. Hubby came home Thursday with a major sore throat (he was traveling) and we opted to do a quick stop at our favorite pub, food only, no alcohol.

2.  Stopped at McDonalds Monday, Wednesday and Thursday morning for a sausage mcmuffin which fed me breakfast and lunch those 3 days.

I'm sure there were more to be added to both lists but I'm still trying to get back to normal ;-)

100 Days of Happiness - Days 7 - 11

Days 7 to 11
I've been sick ... some kind of throat virus that ended up with a chest xray, antibiotics, inhaler, breathing treatments and steriods due to bronchitis. O M G 

I didn't cook from Saturday until Friday morning ... it was bad. McDonalds drive through every morning for breakfast ... half the sausage mcmuffin for breakfast and other half for lunch. Then soup one night and green tea.

So glad that we have insurance again that pays for prescriptions!

Friday morning I was coming back to life ... but now Hubby is down as is Princess so I pulled stuff from pantry and freezers to make a chicken sausage & bean soup for dinner. Not our normal Friday night feast but so glad that I feel up to cooking again!

Day 5

Even though they are getting tons of bad publicity, I am so thankful (and HAPPY) that my dad is able to get ALL of his meds and the majority of his healthcare through the Veterans Administration. Even though we spent 2 1/2 hours at the Miami hospital on Thursday, I'm just thankful that he's able to get the medical care he needs and deserves. Honestly, the Broward location is the VERY BEST ... Dr. Alapadi and her staff rank way high on my list!

Happy Hour Friday - Orange Thang

I am itching to go somewhere, anywhere ... I just need a little escape!

Alas, I don't see that happening too soon since Hubby started his new job and honestly, I'm not going to pitch a fit about that!  I was banking on Nashville again for the big 5 0 birthday in May but will have to hold out for a later visit (Besides, Jupiter Island Resort was a quick drive and very very fun and relaxing!) ...

Oh. Wait. You stopped by for the Happy Hour Friday drink, didn't you? Sorry. Sorry. I got sidetracked.



Having never been to Birmingham Alabama, let alone the 'famous' Bottega Restaurant, I couldn't tell you if this really compatible to the "Orange Thing" they serve ... but for an Orange THANG, I'm quite pleased ... 

Here's what you need to make yourself a few yummy, orangy martinis:


1/4 cup good vodka (seriously, spend a few extra dollars and buy the good stuff ... I used a bottle left over from some party of Kettle One Oranje)
2 tbs orange liquor, like Grand Marnier (I used Cointreau as that's what I have)
1/4 cup of orange juice (fresh squeezed is best and absolutely NO pulp allowed in my drink! Umm...I think this Indian River stuff had pulp)
Roughly 2 cups of ice
1 slice of orange, cut in half and small slit in middle for garnish



Dump all ingredients into a shaker, cap it and shake it like you mean it. Really shake it good.

Strain into one two martini glasses (go ahead, for once I used a real martini glass, spill factor and all), garnish with a half slice of orange. Seriously, this made ONE generous martini allowing for a few sips by fellow drinkers around me, to empty out the shaker.

Go ahead, give it a smell and think Happy Thoughts ... who needs a trip to feel special? I don't!

*NOTE: I had major heartburn after a half of one of these so if  you are prone to heartburn ::sad sad face:: you might want to pop that pill BEFORE you even make this! I still think it was well worth it as I continued to my 2nd drink with regular, quality vodka and liked the 2nd one way better!*

Hubby usually pulls the bottle out and sets it right next to my 
drink if he sees me drinking a fruity drink :-)
