Thai Style Shirmp Salad - What's For Dinner

I knew the minute I added the diced avocado and mango that Hubby wasn't going to be in love with it, but Princess and I devoured it, therefore, a HIT and keeper for us, but only for the girls ...

Easy enough to do, and surprisingly, I can pretty much eyeball the dressing measurements as I chatt with Princess about her adventures as an Office Queen Bee while I make it ... a very fun moment for a mom to see their daughter become something more than just the little girl who so needed her mommy all those years ago... what a relief it is that she is still growing into a fine young lady. Makes me love her even more than I already do ...

Ok, back to the recipe ...

1 bag of coleslaw mix ... the one with carrots and such in it
1 lb of cooked shrimp, rough chopped and remove them tails
1 avocado, diced
1 mango, diced
6 radishes, sliced thin and cut in half (totally omitted them this time around and still yummy)
2 green onions, sliced thin
1/4 cup of sliced almonds
for the dressing you will need:
3 tbs soy sauce (or coconut amino's)
2 tbs rice wine vinegar
juice from 1 lime
2 tbs honey
2 tsp sesame oil
1/2 tsp chili garlic sauce (I used the chili paste I have on hand and definitely wanted more)
1 fresh ginger, minced (I used the ginger paste I have and could have used more)
1/2 cup olive oil

First up, mix up your dressing by adding everything in a bowl and whisk in the oil. Alternatively, just dump all in a jar with tight fitting lid and shake it like you mean it.  Set aside.

Toss the salad ingredients in a large bowl and toss to combine. Drizzle the dressing over the salad and toss gently to combine all.

Refrigerate for about an hour and then dish it up. I had this for lunch the next day and it was DELICIOUS.

Enjoy!

Week 66 Menu Plan - Using What We Have

After 41 weeks of typing "and Week xx of Hubby's Unemployment Adventures" I can delete that line!

YES!

He got the job that he's been working on for the past few months ... I'm so very excited for him ... he will be traveling internationally occasionally (I believe Spain for 4 weeks shortly) and while I'm not excited about him being gone for long periods of time, I do know that he really enjoys the travel and adventures so I'm ok with that.  The pay wasn't quite where I'd like it to be but he's ok with it (meaning it's less than he was making after benefits, allowances and bonuses) but more than some of the other offers. PLUS it's close to home so no big deal to get to the office when he's in town.

We did have to drop a nice chunk of change on 4 new suits (he already has 2 nice ones) but we knew that it was a possibility the dress code would be a little higher than he was wearing before ... ummm, yeah, it is!

So ... with his first day on Monday and Princess entering her SECOND week of her big girl job, I'm going to have to re-train myself to cooking nightly ... I will admit, I got a little spoiled with Hubby being home and getting the dinners put together for me ;-) Time to get back to the real world!

With that, I did pre-make the taco meat on Sunday afternoon ... meant to make the chili too but time got away from me so will do that Monday night (not a biggie and may just cook the beef Monday morning and let everything simmer when I get home Monday night.  Hubby will be out Tuesday night for a dinner meeting (already!!) so that's one less thing to worry about!

Here's what I'm aiming for:

Sunday - hot dogs, chicken sausage and fries ... all from the freezer. Also made a small batch of coleslaw to use up the open bag of slaw in fridge. Hubby picked up the buns while out. The Boy opted to do his Chicago Style

Monday - Cobb Salad - all ingredient in fridge and will use the honey mustard dressing (unless Hubby wishes to have blue cheese dressing) ... both dressings are homemade and in fridge already

I am sort of leaning towards making TWO salads with the 2nd one being the Thai Style Shrimp Salad because I have a bag of slaw left and 3 avocados and 2 mango's in the fridge that need eaten ... Princess WOULD help me eat this too :-) Shrimp in freezer

Tuesday - Taco (salad) Tuesday. Ground turkey from freezer, balance of fixins and ingredients in fridge and pantry (might make a quick run to Costco as I think I'm out of chicken breast!)

Wednesday - Crockpot night - Salisbury Steaks with mashed taters ... beef from freezer, taters premade in fridge

Thursday - chili with grilled cheese sandwiches. I am hoping to get around to making some Grain Free Biscuits too while I'm at it ... we will see. Hoping to have the chili made up on Monday to stick in fridge til tonight. Beef from freezer, balance of ingredients in pantry and sandwich stuff in fridge and pantry

Friday - Chicken on the grill with some veggies on the side

Saturday - Hubby's Choice

I would say it's going to be a pretty exciting week so there you have it!

Aussie Chicken ...

It's been a while since I made this and since it's on the menu this week ... I thought I would renew the post ... always good to bring them up to the top again!

I do consider this to be a frugal meal as I almost always have bacon and chicken on hand ... throw in some pantry staples of canned shrooms and whatever cheese you have on hand and YES, it's frugal if it kept you cooking in your own kitchen!  This is seriously something that you would order in a restaurant and I bet, $14 and up is the going price!

The recipe is pretty simple:

Boneless skinless chicken breast, cut them in half (butterfly) so that you have two thinner pieces (I almost always use 3 pieces of chicken to create 6 total)
Bacon ... about 2 to 3 pieces for each piece of thin chicken (in my case, 12 slices)
Cheddar cheese, either shredded or slice, whichever you have
Provolone cheese, shredded or sliced. You really can use any kind of cheese you want!
Mushrooms (optional, I used a small can of shrooms)
Honey Mustard Dressing (I made mine)
Mrs. Dash (original, or any other seasoned salt you have on hand)

Are you ready to give this a shot? Let's hop to!

Fry up the bacon til crispy.  Drain bacon on paper towel, paper bag, whatever. Do NOT drain the bacon fat from pan.

While that's cooking, sprinkle the chicken with seasoning, both sides.

(sorry for the raw chicken picture!)

Add chicken to the pan that you cooked the bacon in and cook chicken over medium heat, flipping when one side is golden. Cook til no longer pink inside ... remove to plate and keep warm while you finish cooking all of it.

Line a baking sheet with tinfoil. This is totally optional but you will see why I suggest it at the end of the post!

Spread the cooked chicken with a little (or a lot) of the honey mustard dressing, and brush it all over the top side only.

Move the chicken to the baking sheet and place a layer of bacon, the shredded cheddar cheese, the shrooms and then top with half a slice of provolone.

BACON

CHEDDAR CHEESE

 SHROOMS

HALF SLICE PROVOLONE CHEESE

Bake at 350 (or if you are adventurous and REALLY watching things, BROIL) til the cheese is bubbly and melted.

Remove from oven, carefully dish up and serve with a side veggie (I opted to do spicy green beans) and serve.

I wanted shrooms on the ones for me and Hubby so I dug around in the pantry and came out with these in hand

Clean up was really easy ... all I really had to deal with was the frying pan ...

Pull off the foil and ....
a CLEAN pan! I do NOT endorse cheap/thin tin foil for this reason!

Tossed in a jar of salad for me on the side along with more of the honey mustard dressing and whoopee ... I was one HAPPY camper for dinner!
