Menu Plan #94 - Using What We Have

I can't believe it but I managed to stay out of the store for 9 days so far ... that last Costco trip really set the budget back a little ... granted, there were a few pricier household items included, but still ... I am most likely going to need to stop sometime this week though for milk and veggies but otherwise, I might continue on an impromptu pantry/freezer type challenge. I'm just not going to make it "official" :-)

Hubby is back in home and some friends are here too for a few weeks so there will most likely be some deviation from the original plan. It's life, lets face it!  AND I'm hoping to get back to the gym a few times this week since I've slacked off (I really overdid it one day and hurt myself) ...

I am off on Monday for Columbus Day. I started a little batch cooking on Saturday (made the double batch of mayo) and cooked a dozen eggs (which Hubby took it upon himself to make deviled eggs Saturday night as we had friends over) ... I was really hoping to get a lot done for the week ahead, and then Saturday afternoon I started feeling like I was coming down with a cold ... I had taken a Zyrtec earlier for the sneezy/runny nose and then took 2 dayquil which sort of put me down for the count that afternoon ... thankfully our friends were bringing all the food and we were having everything at the house here, odd, I know, but their house is still closed up for the most part so it was easier to bring everything here and prep ... Sunday was spent in the new recliner most of they day so Monday will be a prep ahead day now ...

Here's what we are looking to eat this week:

Sunday - White chili (chix from freezer, balance of ingredients in pantry and fridge) in the crockpot (new recipe, not overly crazy about it) ... had planned on baking some bread  (pantry) but just didn't have it in me. Fed 4 ... and the chili was not all that great. Will try to doctor it up some more Monday.

Monday - Wanting to run to Costco for a few things for the office, home and return the glass carafes (chipped and too big for fridge) ... making a pork tenderloin (freezer) with some steamed broccoli (freezer) on the side. Feeding 6 (I believe).

Tuesday - been awhile so it's Taco Tuesday. I will make mine a salad, of course. Beef, cheese in freezer, seasoning and tortillas in pantry, salsa will be made (pantry ingredients), and guac is in fridge (Costco). Taco meat will be pre-cooked on Monday. Feeding 4.



Wednesday - I would like to say either leftovers or soup and sandwich. I'm leaning towards to soup and sandwich idea ... panini pressed cubanos ... will use the leftover pork tenderloin, may need to pick up some ham if I can't find any in the freezer, balance of ingredients in pantry and fridge. Will use the loaf of sour dough sliced bread in pantry to use it up.  I might also get overly ambitious and make the black bean soup that I have not made in awhile ... Feeding 6.

So need to get a better picture of this!

Thursday - Most likely a chicken or beef stir fry. I've got the chicken in freezer, the beef strips in fridge (that I need to move to freezer soon) and the stir fry veggie kits in the freezer. Will make a batch of basmati rice (pantry) in the rice cooker also. Feed 6.



Friday - Hubby's choice ... at this point, I'm not sure what I will pursued him to do ...

Saturday - Hubby's choice again ... and again, it's up in the air and I will let him decide...

  1. I've never heard of cubanos -- but they look wonderful! Just in the past month I went to Costco with a friend, for the first time. I can see that it would get addictive! Enjoy your cooking and that great recliner this week!

  2. The Cubano looks fabulous & I've pinned it so I can give it a try. Costco is such a slippery slope - I love it but I have to be careful not to go overboard.
