Appetizers ... Bruchetta, Hubby Style

You all know that Hubby likes to cook ... and I will admit, some things he makes way better than I do ... but my number one issue is that he refuses to follow a specific recipe ... that's why he's not allowed to bake very often!

But this dish he made ... it was so very good and I was wishing I had bought the whole loaf of ciabatta bread instead of just 2 rolls ... I would have definitely have eaten ALL the bread and regretted it the next day!




It was really a no-brainer watching him put this together one night ...


2 ciabatta rolls sliced in thirds (we wanted them thin)
olive oil infused with a little garlic over a low heat
Italian seasoning
grape (or cherry) tomatoes, sliced thin
fresh baby spinach leaves
fresh mozzarella cheese

Brush the bread with the olive oil.

Sprinkle with Italian seasoning



Layer with spinach leaves.

Top with tomatoes.

Layer on the cheese.



Pop in the oven at 350 to 400 degrees and keep an eye on them til the cheese is gooey and turning brown around the edges.

Slice each in half and serve up ... what a delicious and wonderful appetizer!
